If you can upgrade to park view you will be able to see the magic kingdom and watch the fireworks from your balcony. I don't know if this is in the budget for you, but it does heighten the experience. You can see the castle from your hotel room (and request a high floor).

To the OP: If you are looking for something to do close to the port, walk around Bayside. It's a lot of shops and restaurants that you can hang out at. It is just a short cab ride from the port. Very popular.

With the young ones I would advise getting to the park early and head back to the hotel around 2pm. Relax, nap, eat, and go back to the park in the evening hours refreshed. This will help keep their energy up and avoid the worst crowds of the day. The kids will appreciate this broken-up day.

Why don't you start by calling resorts around the lagoon like Grand Floridian or Contemporary and asking about boat rentals. That lagoon will also give you the castle backdrop.
