I do what my mom did and make the stuffing the night before and let it rest in the refrigerator. So in the morning when I stuff the turkey they are both the same temperature, maybe that helps I never thought about that before. Stuffing was always and is always homemade on holidays, we used Stove Top (which is good too) the rest of the year. I use my mom's recipe and it is so simple, dry bread cube (1 packet plain, 2 herbed), butter, onions, celery, salt, pepper, sage and chicken broth. So good. My husband's family always used Stove Top and once he had my mom's stuffing he said it was so much better. Now if I even joke about not making mom's stuffing for a turkey dinner he whines and complains. The rest of the year he is just fine with Stove Top or generic Stove Top.:)

My mom has always made a bread-based stuffing, and my MIL a cornbread-based stuffing with celery and sage. Both sooo delicious, I love the contrast...!!!!! :hungry: :)
