It's such a pretty color. I have never heard of peri-peri sauce. What's in it?

Thank you. It is pretty good stuff. Peri-Peri sauce I read about on a BBQ forum a couple of years ago and have been using it ever since. Nando's brand comes in several versions including mild, medium, hot, extra hot, garlic and lemon & herb. I like medium and garlic the best. Hot is a little too spicy for us so I have not even tried the extra hot. It has a good flavor, way different from Tabasco, Frank's Red Hot, Louisiana Hot Sauce, that sort of thing.
Oh, and you can get it a the grocery store. I found some at Big Lots one time too.

Happy belated Valentine's Day. Yesterday was a day off for all the guys due to ice. Ice in the morning over 50 before noon. Today was a couple of classes in the morning and a couple of LS miles. Tonight's dinner leftover roast veggies and white beans. I'm done for today!!!!!!!!!!!!
Yuck! You need to come South! 77 wonderful sunny degrees!! Feels like April!! I am so happy!!!!!

Good afternoon. Took a day and went shopping like I don't do that a lot! lol It is wonderful weather 75 today. But, the bottom drops out tomorrow with rain and 40s highs. Not happy about that. Going to go walk with my DH this evening. We haven't been walking together in forever. Dinner is grilled turkey burgers and a big salad. The countdown is on for our next trip and I really need to lose a couple of pounds. So, we have started the lighter foods and not so much the heavy winter menus we've been having lately. Have a great weekend!! :)

Great minds think alike. We got out today before the bottom drops off tomorrow. Tonight's dinner zoodles and broccoli for me spicey pork and veggie unfry for the guys. Have a fun and healthy weekend.

Happy Saturday!

I had to take a few days off from working out, because I was feeling a bit sick. I am better and I am in with an hour long kickboxing workout. We're getting snow tonight (Boo), but it will be in the mid-70s mid-week. I can't wait to go walking. My husband even bought a steak for himself to grill. :rolleyes::hilarious:

She talks a lot and I don't. She also talks over me a lot. Sometimes I think it's deliberate because I begin talking and she starts talking and sometimes I think it not. When she does this I just tell her I am trying to talk and to just let me finish my thought. She loses interest in the conversation and stops talking altogether. It frustrates me, because I am a quiet person and I am mostly a listener. I don't need to hold court in a conversation.
Yeah, I think that might be a MIL thing...mine does the same thing. Or, she tries to finish my sentences for me and I have to tell her to please let me tell her what -I- was going to say, not what she THINKS I wanted to say. I don't think she means any harm by it, but she doesn't particularly feel like waiting for me to finish my thought, so she just says something assuming that's what I was going to say. It's frustrating, though, I agree! Most of the time I get along with my MIL quite well, but there are moments that are really trying. Does yours visit you often? They live in the UK, correct?

I finished my cake. I have no idea what the inside looks like, but it came out taller than I thought it would. I tried to make a conversation heart out of fondant and I should have stopped after writing "XOXO" on it. Instead, I painted it with pink and silver pearl dust and it ruined the pastel effect.

It looks beautiful!! How do you get the edges on the frosting to meet up so smoothly? Do you ice the top first or the sides first? Mine never look that nice.

Thank you. Frosting a cake always stresses me out, so I was just relieved I was done. I am always trying to get it perfectly smooth with sharp "edge" at the top.
YES!! That!! That's what I can never get! I think yours looks amazing! Mine never come out like that...there are always a few unevn spots or places the frosting just didn't cover. And If I manage to get the sides all smooth, which is a miracle in itself, then the top looks horrible. I'm really bad at the base frosting. Then I try to cover the "problem areas" with like...icing roses, or whatever. I've gotten pretty decent at making Icing Roses (THANKS, YOUTUBE!) but the base frosting just eludes me.

I was tired of imperfect edges no matter what I did, so I googled around and found the "upside-down cake frosting technique." I watched a few videos and took a bit from each video to suit my situation.

I traced the bottom of the pan onto some parchment paper. I fastened the paper to my half sheet sized silicone mat with frosting and put that onto my turntable, so it doesn't slip. Then I spread an even layer of frosting in that circle, extending out about a 1/4 inch. I put the top layer of the cake onto that frosting circle, centering as best as possible. I assembled the rest of the cake. I used a spirit level to press down on the cake to make it level once the final layer was on. Then, I used my bench scraper to scrape that extra 1/4 inch of frosting on the bottom up onto the cake. I put a crumb coat on using a long spatula and put the cake in the fridge for about 30 minutes. Then I frosted as usual with a long spatula, using my bench scraper while turning the turn table. On the final go round, I dipped my bench scraper in hot water, wiped it off to smooth out the frosting. You can do this as many times as you feel you need it, but I knew if I did that, I'd probably create a new problem. I stuck the cake in the fridge again for a half hour. I took it out and spread more frosting on the bottom and put the cake board on. Then, I carefully flipped the cake over, so it was right side up. I peeled off the silicone mat, then I slowly peeled off the parchment. They say you can touch up the top, but I left it alone for fear of screwing up my edges. LOL

Things I felt helped me immensely were using Swiss meringue buttercream, instead of American buttercream and dipping the bench scraper into hot water before smoothing the side of the cake. I find Swiss meringue buttercream spreads much better than American buttercream and seems to stay stable longer before it needs to go into the fridge. It is extra work, since you have to dissolve the sugar into eggs whites over hot water, but it performs so much better.

I know this method might seem convoluted, but I seem to have spent the same amount of time trying to get "edges" the old way-going around and around, adding frosting, scraping frosting, then having to stop and chill everything because the frosting was melting. I make the cake and frost on different days, so the whole day isn't shot making a cake.

But if you watch a few videos, you get an idea of how to make this method can work for you, using what you have in your kitchen.

Hello-

I am in with a kettlebell workout. I usually time myself and I was a little slower to get through the circuit twice this time. LOL :confused: I still feel sweaty and "worked out," so it's ok.

I am thinking of going to the Art Museum tomorrow. I was supposed to go Friday, but I was under the weather. The schools are off tomorrow and I am thinking the museum will be crowded. I usually like to go on weekdays, when it's a bit more quiet.

Thank you!! That's interesting. I've always dipped the scraper in hot water because it does make it easier to spread, but I never thought of frosting the cake upsidedown. I will have to look at some videos!!

I think my cracker is losing steam...it's not registering as much. Like...I rode my bike to work today, walked almost the whole time at work, and then rode my bike to pick DS up. So that's an hour of bike riding and 5 hours of walking...it says I did 20,000 steps, which could be pretty close, but it says I've only been active for less than 2 hours and I've burned fewer than 1000 calories. With 6 hours of activity? How would one EVER lose weight at that rate?
