@93boomer here is another suggestion for your husband to try. It will forever change how you have sausage biscuits for breakfast. It is called a breakfast fatty (not real sure why). Just take a one lb. roll of breakfast sausage (Jimmy Dean etc...) open it, leave it whole, sprinkle it with your favorite BBQ rub and smoke it over apple wood smoke to an internal temp of 160 degrees. Then, slice it like regular sausage slices and serve in a biscuit. Very good, moist and tasty.

Oh, and Christmas is easy too. Get a nice sized spiral sliced ham and smoke it (again with apple wood, or perhaps cherry wood) to an internal temp of about 130-140. It is precooked so your are just heating it up and adding smoke flavor. When it hits about 110 glaze it with some peach preserves or strawberry preserves thinned with a little apple or orange juice. Don't put the glaze on too soon as it will burn because of all the sugar. Throw away the glaze mixture that comes with the ham. Another good choice is to glaze it with real maple syrup.
Another good glaze for smoked ham is grape jelly.
I hope your husband enjoys the smoker for the holidays.

That sounds good just wish I wasn't allergic to bulgur. Bulgur is wheat @MinnieM123

I had bulgur once--many years ago in high school cooking class. We had a guest teacher once from France, and he taught us how to make a bulgur meat loaf. I can't remember how he made it, and that was probably because I thought he was cute and was focusing on him, and not his cooking. :p.

I'm home, I covered 3 classes, showered and want to pass out. DH had to leave at 4am this morning so guess who had to be up before 3. Tonight's dinner a large everything salad with quinoa. I did all the chopping this morning:joyfull: I got quite a bit done including 2 miles before everybody got kicked out.:joyfull:
I thought you were done with the early mornings for a while! Boo! And wow...3 classes! How can you make it through. I spent about 5 hours biking back and forth from home, to school, to activities, to therapy, etc yesterday and by the time I got to work, I was in pain and my boss put me to work sitting down. Today, my knee hurts so much that I can't do stairs. How does you body withstand the constant activity?

I spent about 5 hours biking back and forth from home, to school, to activities, to therapy, etc yesterday and by the time I got to work, I was in pain and my boss put me to work sitting down. Today, my knee hurts so much that I can't do stairs. How does you body withstand the constant activity?
The early mornings I can handle, it was the getting up early for the boys and dealing with my dh late that was killing me. As far as activity I'm doing a bit less than pretrip. Mixing in yoga and stretching helps so I try and make sure to add that in. It helps me big time. I also limit my high impact, no outside running or jumping. I also try and listen to my body and if it says day off, it's day off. As far as the 3 classes only one was high energy so there is that. Try and rest you knee when you can, GWS xoxo

I'm resting today, other than picking up DS from school later. I don't have to work, and there are no activities today, so I'm just vegging until it's time to do the school run. I was going to make a birthday cake today since we're celebrating DS's birthday this weekend with my in-laws, but it's not happening.

So my wife's Christmas present arrived today. I always try to find something I know she will like and appreciate. She is still loving the Fitbit from last year, so I have to pat myself on the back for that one.
Something different and unusual this year. We got reservations for Elkmont campground again. All 211 campsites sold out almost immediately, but I was online at exactly 10 a.m. on the six month in advance day and the second it hit 10 a.m. I grabbed the campsite so we can go see the fireflies again. I have mentioned that I took a wild notion and sold the camper, but we do have a nice tent and will use it again this year unless I decide to buy another camper.
Anyway, I got her a hammock to take with us. I believe she will like this...and it is something she probably would not have bought for herself...and most importantly it is not an appliance, or something useful or practical, just fun.
@21stamps this might be a fun gift to consider for T.

For the firefly event I could not get a riverfront campsite as they were already sold out. I did get a riverfront site for earlier in May, so we will be camping at Elkmont at least twice this spring. I did an online search and found some photos of our campsite beside the river. This is the exact spot. I think relaxing in the hammock will be nice, maybe a good place to read a book. That is if she can stay awake while listening to the soothing sounds of the water. The riverfront sites are hard to get as they book up quite rapidly.
Here is our riverfront site. Can't get much closer to the river. And it appears there are some trees just perfect for hanging the hammock.
