Good afternoon! I am trying to survive the week packing for our trip next weekend. I can't believe it is less than a week until we will be at WDW!!!!! The weather is looking on the cool side in sunny FL so far though. I think we will be in the low 70s and 50s at night unless it changes by then. I really dread our weather here the latter part of the week. There is snow (yep Figgy, not happy about that!) with highs in the 30s and lows in the 20s up until we leave. We will have to bundle up when we leave and hopefully shed the heavy coats on the drive down.
Got my walking outside finished awhile ago. Going to do some YWA next. Dinner is grilled salmon, coleslaw, and leftover smoked deviled eggs. Everyone have a safe and fun evening!! :)

@epcotisbest Well we used our smoker over the weekend! We smoked deviled eggs like our DD had prepared for our Thanksgiving dinner at her house. They were awesome!! While they were smoking, we had some thawed pulled pork and we stuck it in a pan and smoked it for the flavor. It picked up the smoky flavor too. My DH is hooked now! He is trying to decide what he wants to smoke for Christmas. haha

Good afternoon it was too cold to go outside early so I got my YWA done early and got my miles in later half inside and half out. Tonight's dinner a quinoa owl with tomatoes, onion, fresh herbs and arugala. @93boomer I hope the snow misses you and you have a nice easy ride down.

Hi folks! I am finding it difficult to find time to be on here. With the boy child's new school, it takes a large chunk out of my day to go pick him up by bike, since I can't drive. With all the hours I'm getting at work, PLUS the time spent taking the kids to activities and picking them up, and picking DS up from school every day, my time is limited. The up-side is that I went to get new clothes for my choir performance coming up and had to get a size smaller than I am used to getting. And I ran into someone from my old choir and the first thing she said to me was that it looked like I had lost some weight. I was starting to get frustrated because I don't see a difference, but apparently there IS one...I just need to keep it up. So yay for that!

I'm home, I covered 3 classes, showered and want to pass out. DH had to leave at 4am this morning so guess who had to be up before 3. Tonight's dinner a large everything salad with quinoa. I did all the chopping this morning:joyfull: I got quite a bit done including 2 miles before everybody got kicked out.:joyfull:

My favorite is smoked meatloaf. Lots of online recipes.
Made smoked chili tonight. Cooked the ground beef on the grill with a little apple wood smoke to give it a nice smoky flavor before curmbling it up in the pot to make the chili. Served with cornbread made from freshly ground corn meal from a local grist mill. Freshly ground corn meal just is so much better than what you get at the grocery store.

@93boomer here is another suggestion for your husband to try. It will forever change how you have sausage biscuits for breakfast. It is called a breakfast fatty (not real sure why). Just take a one lb. roll of breakfast sausage (Jimmy Dean etc...) open it, leave it whole, sprinkle it with your favorite BBQ rub and smoke it over apple wood smoke to an internal temp of 160 degrees. Then, slice it like regular sausage slices and serve in a biscuit. Very good, moist and tasty.

Oh, and Christmas is easy too. Get a nice sized spiral sliced ham and smoke it (again with apple wood, or perhaps cherry wood) to an internal temp of about 130-140. It is precooked so your are just heating it up and adding smoke flavor. When it hits about 110 glaze it with some peach preserves or strawberry preserves thinned with a little apple or orange juice. Don't put the glaze on too soon as it will burn because of all the sugar. Throw away the glaze mixture that comes with the ham. Another good choice is to glaze it with real maple syrup.
Another good glaze for smoked ham is grape jelly.
I hope your husband enjoys the smoker for the holidays.

You’ve got to try them! They are sooo good! Just boil your eggs then refrigerate overnight. Get your smoker to 225. Put a pan of water in below the eggs. Sit eggs on oiled rack above the water. Smoke for 15-20 mts. Get them out. Cut in half and remove yolks. Add mayo, mustard, sriracha and worchestershire. Mash up good and refill eggs. Sprinkle paprika on top. My DD did them this way and we tried smoking them already cut in half with yolks in. They had a touch more smokiness. Enjoy!!
