working out for Disney

So while I was at the gristmill the other day buying cornmeal, I also got some stone ground speckled yellow grits. Made a big pot of cheese grits tonight with lots of butter and monterey jack cheese (maybe too much cheese). Topped it with some of the leftover chili. Different and tasty. Did have to jazz it up with some hot sauce.

Plus you don't have to feel guilty or bad that you miss a day of working out! I learned that from Figgy! :D
I didn't even have to miss a day since I have to go pick DS up from school by bike, 25 minutes each way. And yesterday, with the wind, it took me another 5 minutes to get there, so I still got an hour of cardio in, even on my "Take it easy" day. My knee seems to be completely better today and my hip isn't screaming at me, either. So, birthday cake has been baked, but I still need to decorate it. I'm half cheating though...I'm only making enough buttercream to cover it and I'm using fondant to to the design so I don't have to mess with dyes and a bunch of icing bags and tips, etc. I will do a plain white border so I will need exactly one bag and one tip. So I'm going the easy route, but at least there will be cake.

It is snowing here, but we are right on the transition line. We have some snow mixed with light rain. A friend who works about five miles north of me says it has been all snow there and the ground is starting to turn white. No problem with the roads as the ground is too warm. It was in the 60s and 70s just the other day. The snow is expected to move further south and we could get some accumulation here before it tapers off tonight.
Here we don't get a lot of snow, so we get excited when it does happen. Local news channels are preempting regular programming for live coverage of the "winter event."
They just showed a live shot about 30 miles north of us and it is really coming down. Hope we get some of that!

Glad your knee is feeling better! Tell DS happy birthday!!

8C47149B-F837-4421-9560-645D2A857CCD.jpeg Good morning! It is still coming down just a bit. So far 11 inches. We have made our departure down the Mtn later tomorrow morning. Black ice may be on the roads. Even a jeep can’t drive in that. No fpasses any way. Just checking into POR and dinner. Can’t wait for sunshine!!

Good afternoon, so far just a smidge of a coating of carp but it's icy:grumpy: I'm staying safely inside and cooking by bum off since 2:30. Butternut squash soup, unfired stir fry veggies with a ginger/garlic sauce with a hint of dry sherry, Stir fried "bbq" pork in a light soy/five spice sauce, baked spaghetti squash, baked brussels sprouts, more polenta, a pot of marinara, bean salad, apple spice pancakes and a pumpkin spice cake. My goal today cook enough for the week:joyfull: no "workout" yet and maybe not at all:D my arms are a bit tired from all the chopping as all my recipes fill a 12 quart pot:banghead:

We got a few inches of snow. DD was very excited. She made me a birthday present:

You can kind of see it...it says "mom" in snowballs and then above that is a heart, if you look between the "o" and the 2nd "M".
