I would love for Gaston's to have a rustic French menu - something to contrast with the more elegant offerings likely to be found at Be Our Guest. Items like beef burgandy, ratatouille, roasted fowl with french herbs, onion soup, artisan bread and cheese, and some good (non-alcoholic) sparkling cider.
Again, the WDW interpretation of this menu will likely translate to burgers (beef burgandy for the modern peasant!) with processed American cheese and mass-produced white buns (Just cuz' it's American don't mean it's not artisan!), turkey legs (it's gamey, right?), french fries (they're oh-so-french, and qualify as a vegetable!), onion rings (so much crunchier than french onion soup) and root beer (cuz' it's got BEER in the NAME!). I will hold onto this, lowest expectation, so that I can be fabulously surprised and delighted at whatever the menu turns out to be!
*UPDATE on 6/27/2012* Now that the menu for "Be Our Guest" has been released, which includes hot sandwiches, french onion soup, french fries, etc., I'm revising my opinion on what Gaston's will likely serve to include only typical American-style appetizers and bar snacks. But if anyone with the power to define those things is reading this: can I also suggest that in addition to those turkey legs in the concept art, you include root beer floats; sparkling cider slushies; chicken wings with a trio of French sauces; fried mushroom, artichoke and cheese kebabs; BBQ meatball lollipops, and/or fruit tarts?
