You can also use Ham.
Alternatively, shredded beef works as well.
I think it's better boiled as long as you add pepper or any other spice or herb. The flavor gets into the chicken.

People forget that this is Florida and they have a plethora of critters down there. I've also read that they fish out (with a net on a long pole, or other similar types of devices) snakes on occasion, from the lazy river areas of the water parks (in the morning, before the water parks open). I haven't a clue how often that happens, but I've read a few references about that over the years.
not at all. You only boil the chicken with a piece of onion and salt until its done and then remove. The flavor should be strong enough to blend with lemon, salt, onion and the tostada. Besides, you can use the remains for chicken soup.
