Great minds think alike! :D I just saw that no more than 30 mts ago and thought of letting you know about it. But, I got busy. It looks quite good actually. Let us know how it turns out.
I just made it! I had blanched almond flour in the house so used that. Instead of eggs I used 2 tablespoons of flaxseeds that I ground with 6 tablespoons of water. It would have risen more possibly with eggs. It got up to halfway up our Chip and Dale coffee mug. I had it go 4 minutes instead of 3 because it seemed to wet. It popped out of the mug easily. I put some coconut oil on top and it was so good! I will try it with quinoa flour too. I bet I could stir in some fruit as well.

Literally every person I know who has gone gluten free without celiac's has said that they feel better. I think a large part of that though is the reduction in processed carbohydrates that our body cannot actually use. And also, while gluten doesn't necessary affect everyone, I have noticed a reduction in sugar in a lot of gluten free items over what is in regular bread and pasta. Maybe that also plays a role. Our bread here is obscenely sweet compared to other countries.
There was no sugar in the mug bread and I didn’t notice that there wasn’t any. I guess in yeast bread you need the sugar for the yeast.

You sure you do not want to disown your family of that side? lol
Thankfully I look like my dad's side of the family, so I can pretend I'm not related to them...

Of course, the cousin on my dad's side who I look like (and whose kids, strangely, look more like me than their mom) was the one who stole my grandmother's car year ago, so...

My extended family is nuts.
