Most IP rescipes can be done in a regular stock pot but you may need to add more liquid and will need to increase cooking time
I bought a crockpot last year and still haven't even opened the box. I have zero crock pot recipes, so I really want to get some! But Chicken and Dumplings was a favorite of mine growing up...my mom had a really simple recipe, but I can't use it because it involves pre-packaged things I can't get here. It was like...one can of chicken and rice soup and then top it with bisquick biscuit dough and bake it in the oven until the biscuits are done. But we don't have chicken and rice soup here, that I know of anyway...I'd have to look. And I know we don't have bisquick...there's no such thing as biscuits here. I can make them from scratch no problem, but I don't know if that would work. I might have to play with it. And I wonder if it could be done in a crock pot.

Ok @Songbird76 had a quick minute to type it up

Southern Chicken 'n Dumplings

You can basically cook the chicken anyway you normally do, cool then shred. Or, you can follow these instructions. I used two big chicken ******* and did them in the instant pot with 1 cup water and 1 cup chicken stock. It is a quicker version. You can do the chicken in a pressure cooker too.

Long version:

4 lb. chicken, whole fresh
6-8 cups water
4 cups unsalted chicken stock
1/2 Tablespoon black peppercorns
2 celery stalks, chopped
2 carrots, cut into 1 inch pieces
2 bay leaves
1 onion, peeled and cut into wedges
1/2 bunch flat-leaf parsley

Put chicken in pot with the vegetables and spices. Bring to a boil. Reduce heat to simmer, uncovered for 1 hour. Skim off foam. Remove from heat. Let stand until cool enough to shred.

Dumplings

Combine 2 cups flour, 4 teaspoons baking powder, and 1/2 teaspoon salt (can leave salt out if on low sodium diet).
Whisk together. Cut in 3-4 Tablespoons butter to resemble coarse meal. Add 1 cup milk or buttermilk. Mix to moisten. Then, into the leftover stock from the chicken (you can add more boxed chicken stock if needed), drop spoonfuls of the dough in stock. Cover. Simmer for 10 mts. Then, stick a knife into a dumpling to make sure it is cooked.

Mix in shredded chicken to dumplings and gently stir. Heat until chicken is warmed. Serve. Enjoy!
Thank you! I might have to try this tonight! It looks sooooo good? When you say put chicken in pot with veggies and spices, I assume that also includes the water and chicken stock? I saw another recipe (I went looking before you said you had one) that also called for a bit of flour and cream, so it made a thicker and more creamy soup. And it called for peas, which I would substitute for broccoli, maybe because my daughter loves broccoli, but won't eat peas. So I might have to do some experimentation!

E is heading outside to play in it. She's a little disappointed that her friend isn't at her mom's today. Her best friend lives a block away, and then another of their friends lives a few houses away from the best friend, when she's at her mom's. But she's at her dad's for the day, so no snowball fight with the 3 of them. She might call her best friend though and see if she wants to have a snowball fight. I'm thinking at the moment she's probably making a snowman.

OK, now it's time for the lazy southern single mans recipe for chicken and dumplings. (not southern flat dumplings but fluffy dumplings)

Ingredients:

3/4 lb. of either chicken breast or two cans of chicken (like canned tuna but bigger)
2 cans of Progressive Chicken Pot Pie soup.
1 cup of assorted frozen Veggies. (carrots, peas, string beans, corn, lima beans) or your favorites
1 cup of Bisquick
1/3 cup of milk

Brown raw chicken or heat up canned chicken in the pot. Once they have browned nicely add the two cans of soup.
While that is coming to a boil you can mix up the Bisquick and milk with a fork to a sticky mixture of dough.

When it gets close to a boil add the frozen Veggies and mix up well then bring back to a boil as you add teaspoons full of dumpling dough to the boiling mixture (should come out to about nine different dumplings). Once the dough has been added then reduce the temperature to simmer and cook uncovered for 10 minutes and then another 10 minutes covered. At that time serve. All done in less then 30 minutes.

Purists I'm sure will find my single mans shortcuts to be nearly blasphemous, but you have to remember is the only one I have to please is myself, and this is a quick way to have one of my favorite. I created this recipe because I have no talent for making gravy in quantity. The soup takes care of that. I sometimes add a can of diced potatoes if the mood strikes me. 🙂

For me that makes for three meals. It's also freezable. Three meals with three good sized Dumplings for each one.
That's kind of like my mom's recipe. Which I loved, but we can't get bisquick or chicken pot pie soup. I think I'm going to combine a couple of recipes and put in broccoli instead of peas. It will be delicious.

So the snow is so heavy it broke my shovel. Fortunately I had just gotten both my front and back walkways shoveled before it broke, but I couldn't do my neighbors' like I usually do. Nor could I do the stretch of sidewalk to the store. It's still snowing, but not as heavily, so I hope it doesn't amount to much or I'll have to borrow the neighbor's shovel from across the street. She was out shoveling, too....I was glad to see her because last I knew she was loaded into an ambulance in the middle of the night a month or so ago. I guess her doctor took her off her bp meds and she had something happen...we were yelling to each other across the street, so I couldn't hear her clearly, but she's alright.

So I was going to the store...they've been opening at 10:00 on Sundays since December, instead of 1pm. So I walk to the grocery store in a foot of snow, (which really isn't anything new for me, being from Wyoming) only to find out they aren't opening until noon today. So now I had to walk back and I'll have to go back in an hour again.

So I noticed that the weather app I use is projecting weather, specifically snow, differently. I looked at the future cast and it says a total accumulation of 6-8 inches. So I thought, great, no not great. Which day will be ruined? (Sorry Minnie). It turns out that it is not snow on one day, but over 3 days. People can go to work and stores and such normally when the snow is spread out over a bunch of days, but they make it seem like it will all be on one day. They should just put the projected snow amount for one day only in my opinion. People won’t run off to stores and start hoarding bread and milk if only two inches falls in a day, well unless it is down south where people aren’t used to it. But north of the Mason Dixon 2 inches is no big deal. And currently it is snowing now. Only getting about an inch.

Same here an inch or 2 everyday except Thursday. Thursday may be a chili day:mad:

Not sure if this affects you, but I do know biscuits are affected by altitude. We learned that in Montana 😂😂

If you're at a high altitude, this is a good read. If not, ignore me 😂😂

Enjoy your snowfall I know it is something uncommon there. I hope E gets her snowball fight in. And congrats to her on her award and good luck on the next level.

Oh sorry. I was multi-tasking all day yesterday.
Yeah cook the chicken with the spices and water and/or broth. Then when you take out the chicken to cook and shred, you can add some more stock to put the dumplings in. The liquid will steam the dumplings. The dumplings will make the creaminess as they cook.
My Mom would sometimes put in carrots and celery with the chicken to cook. I like vegetables on the side instead of in the mixture itself.
I would experiment too. You can mix it up anyway you like.
