If you've ever used one of the droids that you can build in Galaxy's edge on that concrete you know why they haven't done it much thus far
A full scale droid - far more heavy, and with much larger tracks - would handle that pavement far more easily than a small, lightweight plastic one would.

After following and contributing to the conversation about this land's construction for years I'm thrilled to have my tickets finally booked to see it for myself next month.
So, I have many, many thoughts but here's a quick review in the form of something I said during the first of six visits to the land, "I can't believe this place is real and I can't believe people complain about it."

My biggest issue with the land is the lack of things to do. They really need to figure out a good in universe, high-capacity c ticket.
Best ideas I can think of are
1) A people mover style attraction above the land with a few show scenes themed to Battu public transportation.
2) Either a boat or jeep style ride with a local guide showing off the plants and animals of Battu, think Navi river journey but more AA.

Sightseeing is a thing to do. Take the time to admire the details and craftsmanship. Sadly most guests and even so-called Disney fans treat the lands as Clark W. Griswold did the Grand Canyon.

A high volume C ticket (like the rumored cut "Bantha" transport") is definitely needed. But they could fix a ton of problems by simply building the sit down restaurant/show, and actually having characters and droids wandering around.

As for what they should really do...expand the land and effectively clone "Hagrid's" from IOA and theme it as a high-speed speeder bike chase through the forest (to get some contraband through).

And create a smuggler's back-alley entrance to the land connecting Star Tours.

In a perfect world, Star Tours would have been relocated to the entrance tunnel so you could take Star Tours to Black Spire and exit into the land making it feel like it was indeed a destination, and then Star Tours would count as an attraction in the SWGE section. They need another ride at least, plus a sit down dinner/show experience... More roaming entertainment! The Landspeeder coaster would be great but would require not only the coaster but a gigantic themed area for it to operate in, and I think Toy Story Land got all of the fiberglass toy props ever made...lol
Something overhead like a people mover or perhaps a purpose-built Rocket Rods type attraction....

Disney can blame themselves for the complaints. Go read the press release when the land was announced, and all the things that were promised that never came about. That's already predisposed a lot to having a negative view. Add in it's divisiveness as far as the timeline goes for the land among the big Star Wars fans, and (my personal complaint of) things feeling too narrow and making things very crowded, I get the complaints. I honestly hated it the first couple times I went. Then one time I skipped RotR at the end of the night when the rest of the family went and walked around after most had cleared out, and really enjoyed it. Then the last time was a trip when DHS was at a historically low attendance day, and again, I really enjoyed the area. I was able to walk around, take things in, and just walk into shops/bars/restaurants.

I think the hate comes from a couple places. I think the land is amazing but def has room for improvement. A couple of places people think the land is lacking are:

1. the strict timeline that it takes place in. Luckily it was cancelled in DL and now that the galactic starcruiser hotel is closed, they will probably cancel the timeline in DHS too. Thats def a move for the better.

2. the phased opening in DL def made the opening underwhelming because while the land looked great, smugglers run is just not a great ride (imo) and cant support the lannd by itself, opening the land in 2 phases was a mistake and they should have waited till RIAE was ready and opened it all at once.

3. Lack of droids and aliens walking around the land. This has gotten better and better (like avengers campus) with more and more characted out and about, but still has a ways to go. But it is improving in DL, i dont know how it is in DHS though

4. No real restaraunt. There are plans for an expansion I hear with a sitdown dining with a show, if they build that, the land will be much better imo. I go in the Bar area, its too loud and i dont drink but its all good imo, people like it.

5. Personally I really think the 2 GE should have been themed to different planets. could have used the same rides, but just on different planets. Endor or Tatooine or something....A shaded wooded GE in DHS would have been amazing

For sure.
And you numbers 1, 3, and 4 are quite easily remedied - and would go a long way in changing the dynamics of the land.
It's a fantastic place, it just needs more life.

If you can't appreciate a land for what it is versus its Blue Sky version, then I can't imagine how any of you made it through one foot of the original EPCOT Center (and I am talking about the park and not the city)

Well, original EPCOT Center was a lot better than Galaxy's Edge, so that probably helped -- not that it's really a fair comparison, since it was an entire park as opposed to just a single land.

That said, Galaxy's Edge is pretty good (and absolutely fantastic compared to the miserable Toy Story Land next door). It could (and should) be better, but it's not like it's bad.
