The class of projectors used for entertainment projects are very expensive and multiple projectors will be used to create an image with high pixel density. Yes, it is cheaper than having a custom manufactured LCD of the same density but sometimes more expensive is not better or sensible.

Not to mention that if your image is mostly black, you don't want to invest in a million LEDs if the vast majority of them will be off.

My question is how they're going to implement this to make it look real. In other words, if the screens are not far back a good distance, it will feel like it's just screens when you walk around, when in actuality, it should change when you walk up next to them, due to the distance, etc.

Does that make sense?

Parallax? People don’t really move around a lot while dining outside of entry, restroom visits and leaving. Stars are also light years away, so their position would appear relatively fixed.

I'm not an expert, but I think the best way they could do it is to have the screens a bit farther back and the windows work as windows.
