There are a lot of things I do that I consider off the beaten path.
+ Every trip, we take the Sassagoula river cruise from Dixie Landings (sorry, that what it'll always be to me) down to DTD one night. Peaceful and relaxing.
+ We go for extended walk somehwhere on property at least once each trip. The last few trips have included walks 1) around the lake at DTD/SSR, 2) from DTD to OKW (unlit path part of the way), 3) from ASR to CSR and back (paved path), 4) WL to FW and back (trail from ne corner of WL to petting zoo area of FW), 5) as far around Seven Seas Lagoon as you can walk, using the monorail to fill in the gaps, etc.
+ We always spend a half-day resort-hopping. Our favorite resorts to visit are AKL and GF, but we take in a few each trip.
+ We like to rent a boat for an hour on Bay Lake/Seven Seas Lagoon on our last day, before heading for the airport. It's a relaxing way to take one last look around.
+ Always see the Electrical Water Pageant, even if the CM's at the concierge desks in the hotel don't know what it is when I ask them for the schedule
+ At least once each trip, we try to watch a movie outdoors. Usually, this would be at the FW campfire, but we've also seen one at ASMu and one on the beach in front of Stormalong Bay
+ Not necessarily off the beaten path, but we like to sit and watch the performers all over property. If we happen upon a performance, we just stop and watch, whether we were looking for it or not. This caused us to discover Guitar Dan and the talking trash can at Rafiki's Planet Watch, a few wonderful perfomers at DHS, and of course Off Kilter at Epcot.
+ Get to a park early enough to participate in the opening ceremony. MK and Epcot openings are wonderful.
Many more, I'm sure, would come to me with more thought, but those are a few.
