I think that IP would work best as a show. Unless it was a book report, if they did a dark ride it'd just be scene after scene of the Emotions in Headquarters, gathered around a control panel. That would make for a very boring dark ride.
Sure if you stay in the headquarters it would be boring but you know there is the entire rest of Riley’s brain

Hence why I said "unless it's a book report". You'd need to have another excuse for them to be ejected from Headquarters again, but then you risk turning it into an attraction that takes place after the movie(s) but still rehashes it, like Frozen Ever After and the Seas With Nemo and Friends.

It could also be a more atmospheric ride that’s just a tour through Riley’s mind. Doesn’t have to be super story driven at all.

If they want a backstory, maybe we’re new workers in Riley’s mind and as part of our onboarding/orientation we get a tour. So we travel by the personality islands, memory banks, secret vault, dream productions, imagination land, the train of thought or stream of consciousness, to the back of mind, down into the sense of self lagoon thing, and up into the control room where we finally meet the emotions.

Could lean into the edutainment part of it and give an overview of each section of the mind as we travel past it too.

With the fact that this building is probably gonna be demolished, interesting question for y’all. Will future world ever get a brand new Pavillion (in a traditional Epcot form) ever again? Or will it be more individual attraction style from now on?

I do think a new world showcase pavilion is gonna happen eventually. At least one. Whenever a viable ip comes along, I’m sure we’ll get a new country.

Personally I don't think we will see either one in the traditional sense of how the park was originally designed, sadly.

I guess that really depends on what you mean. I think there's potential for Wonders, the next iteration of CommuniCore, and a far-future Mission: Space replacement to be multi-attraction spaces, but that's not really a defining trait of a traditional EPCOT pavilion either. Up until Wonders all of Future World East were single attraction pavilions (unless you count the Transcenter as its own thing).

I don't think we'll see a traditional EPCOT anything again unless it's a refurb of something that already exists. At best we'll see something decades from now if we ever do.
