For me as of right now it's
Cinderella's Royal Table - to me it's kind of a staple.
Cape May Clam Bake Dinner - IMO, the Oreo Bon Bons are probably the best desert in WDW
50's Prime Time - great atmosphere, really fun

I also enjoyed 1900 Park Fare's Cinderella Dinner which has Cinderella, Prince, two stepsisters and stepmother. It's a good time. I also like Chef Mickey's as well. I wouldn't consider both must do's though. I also liked Alfredo di Roma when it was around.

This year I'll be trying Cali Grill, LeCellier, along with a few others, but as of now, those three are what I consider must do's.

Chef Mickeys character breakfast is a must do! My favorite buffet breakfast I've ever been to in wdw.

50's Prime Time is a great choice. Food is great, atmosphere is fun, and the interaction with the staff is funny and enjoyable!

Definitely 50's Prime Time!!! I had a 10+ year Disney dry spell, and when I returned as an adult the absolute only thing I remembered from MGM (excuse me, DHS now...) was the 50's PTD.

I remembered it because I was the only one in my family that wasn't scolded for having my elbows on the table...I was so proud!

with a two yr old in tow i'd recomend mostly character meals, as you can get alot of character meet and greets without the hassle of waiting in so many lines in park. I recommend Chef Mickey's at the Contemporary (mickey and friends), Ohana's at the Poly for breakfast (stitch and friends,) Cindy's Royal Table (MK) or Akershus (EPCOT) (princesses - you are already within the 90 days booking period - so these may be full.)1900 Park Fare Breakfast (GF) (alice and friends), Crystal Palace (winnie the pooh and friends) Cape May Cafe (breakfast) (Goofy and friends) and Holloywood and Vine Breakfast or Lunch (playhouse disney friends) You will probably also like 50's prime time cafe (DHS) and whispering canyon cafe (WL)

If you are looking to get a babysitter for a while to have a meal as just the two of you i would recommend california grill, narcossees, Les chef de france or Le Cellier (this one again you will have to be lucky and get a cancellation at this time.)

I do however suggest you make your choices asap and get them booked to give you a better chance of getting your preferences.

Before you go nuts with the character meals for your 2 year old, make sure she actually LIKES characters! AT that age and even a little older, a lot of kids are terrified of them! Have you ever been to a birthday party with a big Elmo or anything, and if so, how did she react? DS3 doesn't like characters- but does fine with the princesses or anything with a human head!
For "non character" fun, how about Teppan Edo, Coral Reef, or Ohana?

Liberty Tree Tavern Lunch, Kona Dinner and Breakfast, I would say 2 character meals, one in the beginning and one at then end. I like Crystal Palace better than Chef Mickey's and I would say Norway or 1900 Park Fare for the other.
