Every now and then I actually learn something new here. This makes a lot of sense.

Any theory on why half the population has turned gluten intolerant in the last few years?

Very few are genuinely intolerant. Half the time you find people can eat gluten and just feel bloated or ill or what have you, and that's often because they eat so damn much of it rather than the food itself.

True celiac disease is some serious stuff that people would have struggled with all their lives - if you ask many so called gluten allergics they've only 'become' gluten intolerant in the last few years, which means it's likely BS.

There are also some people who equate gluten with fat, and think gluten free foods are somehow healthier, which is ridiculous as the artificial fat content is almost always higher in them, so many are trying to improve their diet, just in a really uneducated and ignorant fashion. If you're not allergic, there's no benefit whatsoever to eating gluten-free foods, but many people don't seem to realise this, because science is lies, ya know.

The way foods do take time to react, it could also be something else from earlier that is causing the discomfort. There are also people who lie so much, thinking that an "allergy" is a more polite way to refuse disliked food, that they start to believe it themselves.
