    Animal Kingdom is probably a good choice. If you choose to go to AK, don't forget about Rafikki's Planet Watch. There are several interactive things for small children to enjoy--including a petting zoo. As others have said, they will also enjoy the Boneyard play area.

    Perhaps you missed "somewhat" and "best of." Having traveled abroad, I understand the difference between Disney's depiction and the real thing. Nevertheless, the World Showcase stripped of animation (besides the ride in Mexico) is quite charming.

    We walked up last year in late May and were able to be seated after a moderate wait. The time of day matters. We went around 9 or 10 p.m., I think. By the way... It was worth it!

    Definitely Rose & Crown. The view for Illuminations is fantastic if you are seated on the balcony. If not, you can still come outside and watch the show.

    We have eaten there several times on the dining plan. If I remember correctly, you get the meal, a dessert (like a frozen lemonade) and a drink. If you added a side, I think it would be extra. In our case, we did not need one. We found the meals to be big enough for two people to eat.

    Your list looks good. 'Ohana for dinner is our "must do." We love the restaurants throughout the World Showcase. The pizza at Via Naopli is probably the best in WDW. If you like a traditional family dinner, you might want to consider Liberty Tree Tavern.

    C.O.P. is nostalgic. If I'm not mistaken, Walt designed the ride. That alone should be enough to keep it in the park! I hope the "refurb" will make it sparkle again.
