Good morning I did some HIIT yoga. Yes I'm unwell lol. We bought 50 pounds of potatoes Saturday so today I'm hoping to finish blanching and freezing the rest. Tonight's dinner vegan cottage pie.

Figgy, I had instant mashed potatoes today, and I melted in some shredded cheese, and sprinkled some black pepper. Yum! Maybe if you put some cheese & pepper on your potatoes, you'll like them better! :hungry:

You really do want to see me in the hospital:cautious: Dairy:cautious::cautious::cautious::cautious::cautious: It's not that I don't like potatoes, I actually like fresh new ones but not to often and I like them with just salt and pepper. Good ones from the farm don't need anything else:hungry::hungry::hungry::hungry::hungry:

I really struggle a bit keeping the weight down during this time of the year with fresh veggies that need to be cooked (and eaten). The veggies are not really the issue, it is how they are prepared and what gets served with them I suppose.
Last night my wife made a chicken pot pie recipe from the Joanna Gaines Magnolia Table book and oven roasted squash fresh from the garden. Lot's of carbs in that dish.
Then tonight I made some heavily seasoned boneless, skinless chicken thighs and served it with a salad, which of course I put too much dressing on. To make matters worse, we had some of the leftover chicken pot pie and squash to go with it, so lots of calories tonight. Lots of flavor too!

 Sorry, I forgot again . . . you're lactose intolerant. :( I've just been a cheese hound for so many years and it doesn't come naturally to my line of thinking, that someone could be allergic to dairy.

Many people share your weight battles. My weight fluctuates and now I need to drop some pounds (again . . .). I go through cycles of weight loss and always, weight gain again! :banghead: I just need to watch portions and usually I do well if I stick to that plan.

An almost soul food supper. Probably needed some fried okra and maybe some cornbread to qualify as soul food, but it was good. Marinated the thighs in pickle juice then grilled with Penzey's and then glazed with Heinz Memphis BBQ Sauce, served with collards and black eyed peas, tomato and a piece of toast on the side. Good stuff. I did sprinkle the collards and peas liberally with hot sauce after the pic was taken. Served with iced tea of course. Mine was sweetened with splenda, which is not the same, but better than unsweetened iced tea any day.

The black eyed peas look interesting--kinda like baked beans? (Actually, I've never had black-eyed peas before.) Chicken looks good. I had a bite of collards once and I spit it out. So other than the collards, that plate looks delicious! :hungry:

No, the black eyed peas are not like baked beans. They have a distinctive flavor that is not sweet, more earthy, kinda like maybe a mild tasting mushroom with a soft texture, like soup beans. Collard greens I have been eating for years. They have to be simmered for a long time, with lots of seasoning, then I really like them. Prepared wrong and they can be quite bitter, nasty even.
Being a life-long southern country boy, I have been eating both just about my whole life.

Hi all. I'm trying to get all caught up on the board. We went to Germany for a week in mid-July and had nightmares with internet, so I was way behind. Then when we came back, I worked every night that week, and we've had one heck of a heatwave so I've been avoiding the computer. But I'm afraid if I don't catch up NOW, I'll never get there, and the heat is showing no signs of going away...the forcast is in the 90s for the foreseeable future. Last week was MISERABLE...code orange with advisories to avoid physical activity in the afternoon and to make sure to drink a lot of fluids. It was over 100 degrees, and without airco, it was brutal. They actually bought cooling towels for work, but they only bought 12, and there are like 50 people working at any given moment. So they have been handing out popsicles every day to combat the heat. When I'm home, I've been sitting in a nice cool bathtub and reading. I'm reading some books about Autism right now. I am getting my exercise with work and vacation days, but it's a bit too hot for much more than walking. Hope all is well with everyone!!
