Glad the hand is getting better. Zoodles and tomato sauce sounds good, as do fresh cukes for salad. I love the fresh garden stuff in the summer too. So tasty.

With lots of fresh garden stuff it is fun to make up new ways to use the produce.
The other day I took some yellow squash, sliced it thin, sliced some cucumbers and white onion and marinaded it in some olive oil and balsamic vinegar. Sprinkled it with black pepper and left in the fridge for an hour or so. This made for a nice, refreshing side dish and the raw squash was surprisingly good with the cucumbers and onion. What was left was even better the next day, I guess sitting overnight in the fridge let the marinade do its thing even better.

Nice! Add some cherry tomatoes next time-if you like them. I do the balsamic/evoo marinade on tomatoes, vidalias, and cucumbers. Yummy!

I really gotta stop going by Walmart. Another Akorn Jr. mini kamado for a gift to give and the Blackstone gas griddle for me. Fajitas and blackened steaks with peppers and onions are on the menu for this weekend. Yeah, a new cooking toy.

Happy farm market Friday:joyfull: Today is freedom day for me so I eased back in with a short HIIT with weights workout. Today is also shopping day but that's fun even if it's mostly for food but I'm getting myself 2 things that with the sale coupon combo will cost me 2 something compared to 40. That's a whole lot of stress reduction:inlove:

@figmentfan423 I have been using a Lodge cast iron platter on my gas grill as an improvised outdoor griddle. It works fine, but the new Blackstone will give me more cooking space and, I think, will be more fun to use. If it is more fun, I will use it more often, keeping the house cooler in the summer, and making my wife happier that I am doing even more meal preparation.

So I read an online article about some of the most unhealthy foods and one of the items was canned corned beef hash. In honor of that article I made a corned beef hash omelet for dinner tonight.
I made some corned beef hash and onions, sauteed in olive oil, then made room for a couple of eggs in the middle of the pan, let it set on the bottom then finished under the broiler in the little countertop oven. Added some cheese and folded it in half like an omelet and served with some fresh tomatoes. Breakfast for dinner.
And yes, I know using canned corned beef hash is questionable at best, but coming from a background where we had nothing, that was a rare treat, and I still keep a can or two in the pantry, same for spam. When you were so poor that hash and spam were both considered real treats, sometimes you want to forget it, but sometimes something that simple makes you appreciate what you do have now. Sorry, got off on a little tangent there didn't I ?

I got my new gas griddle nicely seasoned, like a cast iron skillet. Was planning to break it in today, but rain stopped those plans. Maybe later this week I'll try a stir fry.
