Good morning!! What a night we had! A very bad storm came rolling in right after dinner with heavy rain and straight-line winds. Our neighbors 4 doors down lost a huge oak in their front yard right onto the front of their house. The firemen were there a long time trying to cut it out of the house. They are all fine-except for the front part of the house.
I was jumpy all night! We kept having little storms afterwards until around 10. Our cat stayed hidden under our bed most of the night.
And now there are more storms headed from TN, where they are having bad flooding. Keeping fingers crossed that it breaks down when it hits the mtns!
Well I am going to try to run some errands today. DH gone to Charlotte for a mtg until this evening. So salads for dinner if he gets home by dinner.

That sounds scary! I hope there was no damage to your house!! Yikes!

My friend just became a beach body trainer and she said there's a new video coming out, she thinks August 1st, and it's kind of like country dancing/line dancing, if anyone is interested. I'm going to check it out!

Made some four-cheese quesadillas with low carb tortillas that were surprisingly good. Served with leftover taco meat and some fresh, juicy tomatoes. Topped with salsa, sour cream and jalapeño.

So more uses for the leftover taco meat. This is an overstuffed omelette with cheese, grape tomatoes, salsa, sour cream and peppers.

Once again you have inspired me. The boys got quesadilas for lunch yesterday and veggie omletes for breakfast today

Thanks for the compliment. I think I have mentioned before, I exchange food photos with my brother, as we both enjoy grilling and like to compare cooks. Weird I suppose, but then I started posting some of the cooks on here too.
The taco stuff was hamburger initially seared on the grill then crumbled and finished with peppers and onions and taco seasoning in a cast iron pan, again on the grill. Getting the smoky, char-grilled flavor in the taco meat just makes it even tastier.

There are men cutting up the rest of the big tree in the neighbor's yard right now. I know they have a tarp over their living room window but I can't see how much damage was done yet.
Glad you were spared the damage. For us, we had some rain, and a little wind, but the storms were mostly to the south and to the east of us. Watched it on the radar and several times this past week there were storms seemingly all around us, but just not right on top of us.
