What is this from? I have never seen the castle like this before??

I believe it was from one of our trips in 2005, when they were celebrating the 50th anniversary of Disneyland at all of the parks (same time we received LMA stunt show, Soarin', etc.)

It is still there in parts. They had the Darth Vader meet and greet in this area during SWW. The ton of bricks are still hanging above you. Someone else would know better, but is it not by the backlot express restaurant??

It is by the Backlot Express. It's currently a gift shop that's sometimes themed to whatever movie is coming out (I distinctly remember setting off all the Talking Boo dolls the year Monsters Inc was in theatres). The bricks are there, and an elephant. Here's a shot of the decorations from '93 when it was still Roger Rabbit-themed:
