Carnival cruise breakfast of an egg white cheese omelette with arugula, hash browns, bacon and pork sausage…!!!!! :hungry:
(And no, I never ordered an egg white omelette again, as even though it wasn’t bad and I was “trying to eat healthier” ;) that morning, I definitely prefer all the eggy goodness of the whole egg…!!!!! :hilarious:)

On our first Carnival cruise, in Dec. of 2017, they had a kimchi with watermelon in it that was sooo darn delicious…it was especially good on my eggs in the morning…!!!!! :hungry:
Unfortunately, I can’t find a pic of it, and it wasn’t available on subsequent cruises.

Shortly after that, I worked on a design at my old firm for a client that wanted a whole separate prep area in their kitchen just for kimchi, including a separate cooler…!!! :)

Tonight’s dinner was leftovers from a restaurant meal last week. I made some orzo fresh to accompany this very nice chicken cutlet that was covered in prosciutto, mushrooms, spinach, and roasted red peppers, with fontina cheese melted over. The green beans were also leftover, but tho they looked good they were horrible and I didn’t eat them.

We picked up some fried chicken from Popeye's. Since many of their sides are made with pork or beef, I took it upon myself to make the mashed potatoes with turkey gravy, fresh green beans with turkey bacon, our own biscuits (as theirs are like hockey pucks) and coleslaw from the grocery store. Probably will continue to DIY it in the future!

Carnival cruise dinner consisting of a buttered roll, rabbit puff pastry app, fried spring rolls app, chicken parmesan (I had ordered it with 2 cutlets and had already eaten 1 before I remembered to take a pic…ooops ;)), and a dessert that I don’t remember the exact description of, but it involved chocolate and was yum-o-licious…!!!!! :hungry:

Brazilian Skirt Steak with Golden Garlic Butter, a great recipe from the sadly missed, defunct magazine and website Fine Cooking.

Accompanied by roasted Yukon Golds and sautéed spinach with even more garlic.

I think I plated it pretty creatively 😎

Oh my, oh my, a fan indeed…the steak is cooked perfectly, and the accompaniments are 2 of my favorites, as I have yet to meet a potato or spinach dish I didn’t like…!!!!! ;) :hungry:
