Dinner was kind of a mishmash tonight. It often is when I am in charge. I just pulled some stuff out of the fridge to go along with the little beef filet medallions I pan seared. So I just warmed up some leftover fried okra, and we had some coleslaw and macaroni salad leftover from yesterday. Also had some cucumber and the bread is just hamburger buns I toasted with some butter.

"Mishmash" meals are the best! :joyfull:

An assortment of different food is more fun than the usual, 1-item entree & veggies, etc.

Haven't done this for quite a while, but there are some restaurants that have a page of different appetizers on their menu -- I like to order 3-4 selections for dinner, and then I don't bother to order any "main" meal. :hungry:

I can't even count the times we have done the appetizers as a meal thing. It is fun to try different appetizers.
Don't tell anyone, but we have done the same thing with desserts...order two or three desserts instead of a full meal deal. Especially if we are not either one very hungry or are both indecisive in what we want.

Made a big ole platter of grilled chicken and roasted veggies yesterday. Smoked over apple wood and cooked the veggies right in the pan with the chicken. It turned out great. There were potatoes, peppers, carrots, mushrooms and garlic. I had to finish the veggies off in the oven as they did not get as done as I would like due to being under the chicken, but had a great flavor. I will be cooking chicken and veggies at the same time on the grill again.

So I made 3-2-1 ribs today. Smoked for 3 hours, wrapped in foil with honey, butter and brown sugar for 2 hours, then opened back up to finish for the final 1 hour. Used apple wood chunks for smoke. These were incredibly moist, tender, juicy.
Served with coleslaw, and some corn and cucumbers that were in the garden this morning. Also, some tater tots that were in the freezer this morning.
