@MouseDreaming sorry I don't measure but saute 2 pounds ground beef one largish onion finely chopped, a few stalks celery finely chopped and a carrot again minced (in evoo if using lean ground beef) until soft add a couple of tbsps. of garlic finely minced until you can just smell it(don't let it brown), deglaze with dry red wine stir in 3 cans tomato paste let simmer while stirring for a few minutes add 3 cans crushed tomatoes and simmer with one whole carrot until the carrot is soft. remove carrot add salt, pepper and Italian herb blend of choice let simmer 5 more minutes. Depending on brand of tomatoes you may need to add water during the simmering. Hope this helps

Okay. So there is a lot I need to catch up on but I wanted to share pictures from the long weekend in Virginia. So a mini tr. Yay!
I had classes scheduled that morning so we couldn’t leave until 8:30am. Luckily by the time we got near DC, the loop around it was clear. We didn’t really hit any traffic and made it to Jamestown by noon. That was just in time for lunch so we ate at the cafe in the Settlement Museum. I ate a black bean burger. I swear it is the same type they serve at Chili’s.

The kids ate pizza and a chicken sandwich.
After lunch we headed out toward the area where they have the re-creations of the 3 ships the first settlers came from England on. Saw some pretty flowers along the way and took some pictures. I think @ajrwdwgirl likes peonies, so I got a nice shot of one.

I did notice something funny. One of the ships had a solar panel on it. Those settlers were really ahead of their time. :hilarious: I would have thought they would have done a better job at hiding it.

We then walked to the recreated fort and looked in the buildings. One had a chicken who seemed to be enjoying the bed.

We walked to the church and there was an explanation of the Church of England.

We learned about something I was not aware. One of the historical workers told us that The Starving Time as we had learned about it was incorrect. The settlers had lots of pigs on an island nearby that they used for food. But the Natives slaughtered them all so they had no meat to help them get through winter. They also had been blockaded so could not hunt. They ran out of whatever food they had quickly. I always remembered learning that the settlers did not know how to take care of themselves and depended on the native Americans for help. Turns out that was not completely the case. We did see a recreation of an indian village and then needed to leave so as not to get caught in too much traffic. Didn’t matter. It took us 2 hours to go 64 miles. While we were sitting in traffic, we figured we should find a place for dinner and eat before we checked into the hotel. Found one on Trip Advisor. It was a Tex Mex place that had good prices called Pelon’s. We were destined to eat there because we got the last parking space in a really crowded tiny lot. The food was so good. No pictures of the food really. I had a veggie burrito that was delicious. My friend enjoyed her fish taco and the kids had tacos and quesadillas. It was inexpensive and fast. The atmosphere was fun as well.

The next day was competition day. The senior teams were competing early so we went to the convention center to cheer them on. Both teams got 3rd place, which was really good. They got huge bronze trophies. Dd’s team didn’t go on until 5:18 and we didn’t have to be back at the convention center until 6 so we went back to the hotel and checked out a kite festival that was going on.

We ate lunch at a restaurant on the beach called The Jumpin’Shrimp. It was pretty good. They accommodate all types of eaters. They had a veggie burger and offered gluten free buns. It was really good. My oldest daughter had a tuna taco she liked and youngest had pizza. The tuna taco came with a cilantro lime sauce that was so good. I stole it. :hungry:They served kid meals in a frisbee which was neat. We took it home. We got so lucky that every place we found to eat was good and not budget killing.
