This is what I have so far for $5 meals:

Spaghetti with fried eggs

  • Spaghetti noodles

  • Vegetable plate
Potato Soup and homemade bread

  • Potatoes
  • Carrots
  • Celery
  • Onion
  • Garlic
  • Willie Strange’s Good Soup
Stir fry with rice

  • Protein (egg, tofu, chicken)
  • Vegetables (in season or frozen)
  • Rice, noodles, or romaine wraps
Curry with rice

  • Chickpeas
  • Rice
  • Find recipe
Smoked sausage and veggies

  • Smoked sausage
  • Rice
  • Vegetables (in season or frozen)
  • Bulk up with potatoes or rice and beans
Pulled pork and eggs

  • Pulled pork
  • Eggs
  • Vegetable plate
Beef bowls

  • Ground beef or turkey
  • Rice
  • Black beans
  • Sour cream
  • Diced tomatoes (in season or canned)
  • Alternative – Korean beef bowls
Bean and cheese quesadillas

Lentil soup with homemade bread

  • One onion browned
  • 1 cup red lentils
  • 1 bouillon cube
  • Sprinkle of cumin
  • Salt
  • Pepper
Red beans and white rice

  • Find good recipe
  • Add fried eggs
Pizza naan/ bagels/ bread

Frittatas/ Omelets

  • Eggs
  • Vegetables (in season or frozen)
  • Cheese
  • Maybe sour cream
Taco bowls/ wraps/ tacos/ burritos/ burrito bowls/ nachos/ taco or enchilada bake

Sandwiches – picnic meal or tea party meal – get creative

  • Grape and cream cheese
  • Avocado and cream cheese
  • Chicken salad
  • Egg salad/ scrambled egg
  • Pinwheels instead of bread
  • BLTs with fried eggs and avocado
  • Toasted subs (could do with leftover meatballs/meat loaf too)
Breakfast for dinner

  • Sweet potato hash

  • Half hamburger/half ground pork (fry and drain)
  • Season as you like
  • 1 to 1.5 tablespoons flour on meat. Cook until flour browns a little
  • Add about a pint of milk
  • Add more milk if necessary but don’t add more flour
Cabbage hamburger helper (over season)

  • Ground beef or turkey
  • Cabbage
  • Butter
  • Shredded cheese
Grilled cheese sandwiches and canned soup

  • Gouda and apple

O.k. Reading all that is making me hungry! :hilarious:

I can't offer any expert recipe tips like Figgy, MySmallWorldof4 and 21Stamps can, but I did want to add one item that was conspicuously missing from your sandwich menu. What about good ol' peanut butter and jelly sandwiches? They're cheap to make and peanut butter has protein, too.

What the what??!!! Deployed? Where? Why? (Guess I didn't know he was still in the service--I thought he was in the private sector.)
He's civilian currently but not private sector. Where, some place not fun. It's till early and but he's on list, how far up or down is yet to be determined.

Believe me I have tried other places for years now. Even those that advertise Montreal Smoked Meat. Not even close. Anyone that has ever had one of those will know what I am talking about. The seasoning, the tenderness of the meat, the small pieces of Rye Bread and yellow mustard. I've tried to duplicate it. In fact, just today, I had purchased some corned beef and tried to duplicate. Just didn't work, it was good, but, not THE sandwich.

Reminds me of the REALLY good New York delis--nothing like them anywhere. Corned beef, pastrami, etc. -- beyond delicious and their sandwiches are huge. I also think a big part of this is how they expertly know how to slice the meat--yes, that CAN make a difference.
