Would it be wrong just to make 2 days' worth of appetizers and live off of them for NYE and New Year day?
Are you sure that is possible with your boys appetite?

For me, New Years Day is Porterhouse steak on the grill in the 30s. Sides are going to be fried mushrooms and baked potatoes:hungry:. Snacks for New Years Day is what I'm having for New Years Eve. New Years eve meal includes cheese and sausage, crackers, cookies, veggies and Swedish meatballs.

I don’t think the appetizers will last very long.
By appetizers I meant turning a half pork loin into katsu bites, a few pounds (dogs) into pigs in a blanket, sausage bread, large batches of hummus, several trays of crackers, a few types of "cheese" a few veggie trays, lots of stuffed mushrooms, a couple of cooked/pickled veggie platters, chips and dips (sauteed onion and salsas)
In other words catering for my boys or a wedding of 50+
