Here is the best fudge I have ever had. Many will say it is a copout, but if that is the case I prefer it to the complex way. Here is what you need. I got this recipe on You Tube (2 ingredient fudge "Hillbilly Kitchen")

1 12oz bag of Hershey (or your favorite) semi-sweet chocolate chips
1 14oz can of (any brand) Sweetened Condensed Milk (must be sweetened)'
1 mixing bowl
1 stirring devise either a strong spatula or a wooden spoon
1 microwave (1000w) less than that might require additional 15 second to get it all blended)
1 wax paper lined square cake pan.

Mix the chips and Condensed milk together well in bowl ( you can add walnuts at this point if you want. I prefer my chocolate straight)

Place bowl in the Microwave on high for 30 seconds

Mix the bowl well again (You will see that the chips are starting to melt)

Place it back in the Microwave for another 30 seconds

Stir it again for 30 seconds or until it is all blended and the mixture get glossy and starts to thicken. (if you have a weaker Micro you may need to put it back in for 15 seconds and stir again. Repeat this until you get that gloss, you'll know it when you see it)

Pour the contents into the cake pan and spread it out as best you can.

Put the pan in the refrigerator for at least 4 hours and I promise that you will practically destroy your pancreas within a few days and storage for a long period of time will not be necessary, but it can be frozen. The Fridge will do fine after you cut it up into squares and put it in a covered plastic storage container.

The wax paper is just for easy removal from the cake pan, use some extra wax paper over the edge of the pan as a handle and you won't even have to wash the pan.

You can convince everyone what a great chef you are as long as you don't tell them how easy it was. I had an Aunt that did that for years and sent fudge out to everyone at Christmas time no one knew but we all looked forward to her fudge and didn't know we could easily make it in less than 2 minutes.

I have made a version of that, it was called fool proof fudge. Was tasty and easy to make.

Is that the one with marshmallow fluff? I think I made that back in high school. I recall it was easy and came out great.

The one with marshmallow fluff is called fantasy fudge, it is fairly easy. The fantasy fudge, the recipe has you boil the sugar, butter & evaporated milk for a certain amount of time. In my experience if it boils too much or too little the fudge can get a little dry or grainy.

This is basically what I do, but I do it over the stove and use broken up chocolate bars because we don't have chocolate chips here. I line my pan with tin foil so I don't have to wash it, and I let mine set on the counter overnight rather than putting it in the fridge. I also add a splash of vanilla extract (you can add almond or mint extract for variation) and a pinch of salt after it's got that glassy look before putting it in the pan.

I've yet to find free hotel coffee that wasn't one step short of swill:(
I grew up on instant coffee and still drink it daily. Hotel coffee reminds me of instant. I did realize what a fresh tasting cup of coffee tasted when I was a barista back in the day. Our supervisor on duty put timers on the big coffee containers. Every hour on the hour the timer would go off and we would dump many gallons of coffee at times down the drain and brew fresh coffee every hour. The taste is delish. If there was a line of customers we would brew once the line of customers gets served. Our regulars knew when the coffee was very fresh.
