Hi guys. Sorry I’ve been busy unpacking and doing laundry. And today is hubby’s birthday so we’ve been outside doing things since he’s off. It’s warm out so feeling good!

This is actually true! I keep thinking it's Wednesday today. I'm on the struggle bus this week. Stressed and tired and just not functioning.

Mr Boomer says thank you all. He had a good day until he received his Medicare card in the mail. Now, he feels old.

He should feel honored about how much everyone in this country cares about his health. Besides compared to others, that will go nameless, he's just a puppy. Hope he has or had a good birthday.

I used my mom's instant pot last night and made chicken tacos. Bought guac and salsa fresca at the grocery store (I'm too busy to do it all from scratch!) and they turned out pretty good.


Now today's lunch is a taco salad.

It's a pretty simple recipe for the chicken if you have an Instant Pot. I just make the chicken broth with a boyon cube.

Instant Pot Chicken Tacos (Pressure Cooker)

Instant Pot Chicken Tacos require 4 ingredients: chicken breast, taco seasoning, chicken broth and salsa. Once cooked, just shred the chicken and you are ready to serve!
