Good luck. Things around here are booked up with people trying to get out due to being cooped up for so long. A local hiking area near where you went at Tallulah Gorge had multiple cars towed because the parking area was full and people were parking along the sides of the roadway creating dangerous conditions for passing motorists.
According to the local news, if any of the wheels were still on the road and no one could be located to move the car, it got towed. Many unhappy out of town hikers who found out the hard way you don't park in the road around here.

Thatā€™s crazy!

A lot of People are staying local or road trips. I called every white water rafting company and adventure resort in West Virginia. Zero availability...unless one can go on a random day midweek.

Iā€™m running into the same problem with lodging that I want on Lake Michigan.., in several different cities.
Hereā€™s what weā€™re doing tomorrow...https://www.landofillusion.com/

They sell quickly due to limited capacity for Covid.. so I just have to buy online first thing in the morning. 1st come 1st serve online day-of only right now.

And the stupid side of Brianā€™s family just posted a lovely (but stupid) pic of ā€œthe next generationā€ - 20 younger folks and an infant. No masks (I mean, who would pose for that with masks, I guess?) and all touching each other. Unfortunately, three of Bā€™s nephews with whom we are close are all there. We havenā€™t even seen an adult pic yet.

I hope we donā€™t see them all in the news in two weeks. šŸ˜•

ETA: damn. Make that 4 nephews and two wives. The fourth is the one B officiated their wedding last year, and the infant is theirs. That kidā€™s Dad (Bā€™s brother) is in the hospital with cirrhosis (obviously high risk.)

I donā€™t get it.

It has layers of a strawberry cake, lemon curd, strawberries, and a black raspberry cream. I also made a strawberry sauce to go with it.

I remember those. They were so delicious.
They come in many flavors and although what they had in Epcot was good, the homemade stuff was unspeakably good.

That sounds good. I have had desserts like that in different flavors, just did not know what they were called. Around here at reunions and church dinners and such they were called layered cakes or layered puddings or stack cakes or something more country sounding. Us silly country folk.

This reminds me of the trifles that were sold on the outside food cart, near the Rose & Crown area at EPCOT. I LOVED those trifles, and haven't had one in years now. :(
In the late 1990s there was a food stand outside Canada/Epcot. It sold fresh fried Beaver Tails. It's a weird looking cinnamon sugar fried dough goodness. I missed that. It's a very popular sweet snack in Canada.

Grocery shopping is done and I'll have enough time to get fermentation project 2 going today, daikon/carrot/ginger pickles. That is after I have some coffee
Do you ever make the Italian pickled eggplant? (I think we called it something like ā€œaboubadā€ but canā€™t find anything like that word online lol. It was prized when Grandma made it once a year.
