Yes we are nice to visitors to the mountains here in NC like that!😊
Looks like the Murphy or Andrews area?

I just looked it up, was Murphy. Honestly the nicest people!!! We stopped on the side of the road to rearrange something, the first vehicle/truck that came along stopped to ask if we needed help! Between that and the store people, I’m super impressed. T said “We should move here, but I know you can’t”. I asked him why I couldn’t , he said “I haven’t seen a Starbucks in any of these towns. I don’t think you can live without that.”

Oh I'm so glad your wife found a new job! And that's great that they were welcoming...I would think it would be kind of hard as a new hire coming in at the moment to an existing company. Everything is so different and up in the air. I'm glad she had a great day!

How long before you know whether you will have to go back home to work?

Thank you...!!! :)

No clue. The hope is that we don’t have to go back to working from home again. But, if we do, we’ll be even better prepared next time. We’ll just roll with it however we need to. And again, fortunately, and for the time being anyway, work is still piling up...!!!:)

What exactly is King Ranch Casserole? Is this from a restaurant or is it homemade?

It’s homemade. I’ve never had it out anywhere before. We’ve had it for decades. My mom makes it, Carolyn makes it.
There are actually many variations. You can use shredded chicken, ground beef, etc.
Generally Ro-tel tomatoes with green chiles is used, corn tortillas, lots of cheese, condensed milk, enchilada sauce. Some use cream of chicken soup, mushroom soup, etc.
Google is your friend...!!! ;)
Decidedly spicy (to your taste) Tex-Mex, and very YUM-O-LICIOUS...!!!!! :hungry:

@21stamps , I loved the photos from your weekend getaway with T. It's so nice to see someplace different, for a change of scenery. The cabin was so inviting, and the whole area was very attractive. Glad that T also had so much fun, especially on the zip line.

(I think it was maybe about 10 years ago, that hubs and I went on a zip line up at Wildcat Mountain in NH. It didn't go down the entire mountain, but it was a thrilling blast down the line, high above the ground. At first I was terrified, but after a short time, I relaxed and was even waving to people below!) :joyfull:

(Stock photo beneath from Bing. It gives you somewhat of a perspective of how high up the lines are, coming down the mountain.)

Very cool...!!! :)
You know me, I just want to go gyroplaning again...and again, and again, and again...!!!!!!! :joyfull:

Tonight we had a taste of normalcy. The craft beer place by my store has been serving to-go, and they have a few picnic tables outside. Lately, people have been ordering and sitting outside to eat/drink, and not being bothered by anyone. So we went and had a beer and split a flatbread and a sandwich. Weather was gorgeous. Felt almost normal.

Brian had a banana pancake stout (because he knew I would want to try it) and I enjoyed this awesome mango beer:

Interestingly enough, I have blown down the roads to our office and back, and have only used my country backroad leisurely route on my morning commute. I use both highways on the way back home, and just fly down the road, as traffic is so thin compared to how it used to be...!!! :)

That's a nice benefit for you. :)

(Side note: up here, the State Police have reported an uptick in really bad car crashes, due to some people who think open roads mean driving, like it's the Daytona 500. So just a heads up -- fewer cars out, but they're going faster; and obviously, none of them have a clue how to drive.)

Word is we may be able to reopen Monday at 25% capacity (which is basically full capacity, because we usually operate at about 10% of maximum foot traffic - more on weekends.)

Also negotiated fairly favorable terms for both rents for April/May. That’s a relief.

SUPER happy for the both of you. Fingers crossed, that all continues to go well from here on. :inlove:
