They've already been pulling elements from the EU. It's not like it's been destroyed, the EU is an idea bag they can pull from for new canon stuff.

I think that Pandora will be an interesting test case for that. Will the food offerings be "authentic" food from Pandora that the Na'vi might eat or will it be normal food with puns?

True. But there has been rumours of a mess hall restaurant on the former military area of Pandora which might lead to a cop-out of offering American food. Hopefully they will at least have kiosks in other areas of Pandora offering Na'vi cuisine.

Disney would want to avoid using obscure characters for major elements, Jock Lindsey for example.

Jock's is a special case because it's a bar, so it sells itself. If it's anything else, it loses all marketability.
