MAPLE WALNUT FUDGE - Canada

[font=Verdana, Arial, Helvetica, sans-serif]Yield: 16 squares

Ingredients

[font=Verdana, Arial, Helvetica, sans-serif]3 cups pure maple syrup
1 cup heavy cream
3/4 cup walnuts, coarsely chopped
2 TB. butter
pinch of salt

[font=Verdana, Arial, Helvetica, sans-serif]Method

1. Generously butter an 8-inch square baking dish.
[/font]
[font=Verdana, Arial, Helvetica, sans-serif]2. Put maple syrup and cream in saucepan and bring to a boil over medium heat.[/font]
[font=Verdana, Arial, Helvetica, sans-serif]3. Insert a candy thermometer and continue to boil, without stirring, until the temperature reaches 238º F, or the soft-ball stage. (This takes between 30-45 minutes.)[/font]
[font=Verdana, Arial, Helvetica, sans-serif]4. Remove the pan from the heat and add butter, without stirring. When the fudge has cooled to 110º F, add the walnuts and beat vigorously with a wooden spoon until the mixture begins to lose its gloss and hold its shape.[/font]
[font=Verdana, Arial, Helvetica, sans-serif]5. Turn the fudge into the prepared pan and allow it to cool for several hours. When the surface is firm to the touch, cut the fudge into 16 squares.[/font]

Several years ago, I had the chocolate lava cake at the Flying Fish. It was deep chocolate with a warm liquid center! I had never tasted anything like it!Then when my husband and I returned, they were no longer making it, much to our sadness. Our waitress, who I'm fairly certain was the same waitress we'd had the first time, told us the chef had left and taken the recipe with him. Later that same trip, however, we found a similar cake at the Kona Cafe. It wasn't quite as good as the original, but it was better than other recipes I've been able to track on the web. Here's the one from the Coral Reef called the chocolatre wave. I've had the pleasure of also eating the one at the FFish. And i'm pretty sure that the only difference is the truffle in the center. So to make the Flying Fish one from this recipe just use dark chocolate and kalhua to replace the white choco. and Grand-Marnier. But the original recipe is worth a try too. Hope i've been helpful and that you'll enjoy it.
INGREDIENTS
3/4 cup butter
1 cup semisweet chocolate chips
1 cup sugar
2 1/2 teaspoons cornstarch
4 eggs
4 egg yolks
1 1/2 teaspoons Grand Marnier

For the white-chocolate truffle:
6 ounces white chocolate
3 tablespoons heavy cream
3 tablespoons softened butter
2 tablespoons Grand Marnier

1. Melt butter in a double boiler over medium-low heat.
2. Add chocolate chips, heating until mixture is melted.



3. Combine sugar and cornstarch in a large mixing bowl. 4. Add chocolate mixture to sugar mixture and beat well.

5. In a separate bowl, combine four eggs, four yolks, and Grand Marnier. Add this to the chocolate mixture and beat until well mixed. Cover and chill overnight.

6. Melt the white chocolate and heavy cream in a double boiler over low heat. Add butter and Grand Marnier and stir until smooth. Chill overnight.

7. Butter and flour six 5-ounce ramekins. Fill 1/3 of each with the chilled chocolate mixture.

8. Add a rounded tablespoon of the truffle mixture. Fill to the top with the chocolate mixture.

9. Bake at 450 degrees for 15 minutes. Let the cakes sit for 15 minutes before inverting. Run a knife around the edges to loosen. Serve with chocolate sauce, raspberries, and/or ice cream if desired. Serves 6. :slurp:

Quick question. I was recently at WDW and saw that they have a new cookbook available. Just thumbing through it quickly I noticed some of the same recipes from the book 1 & 2. I didn't get a chance to check the table of contents, but was wondering if anyone knows if it is book 1 & 2 together with no new recipes or does it have new recipes that the first two books dont have?

I have an older recipe book and in the front it owns up that it only contains recipes from a previous book. This new one may say something similar.

I am thinking the same thing, but knowing Disney they would put one new recipe in the book just to get my money. As though they didn't already have enough of it.

I agree, we need those newer recipes out there, Its been slow going in the release of them lately. Unless someone specifically asks for an older recipe its hard to update the thread. *sigh*

Guess we all need to ask for our favorites and see if the chef will give us the secrets.

I made the beef and barley soup last night. ChefTigger gave me a hint that y'all should know. The soup is made from the leftover prime rib roast from the night before. So rub the beef with garlic and rosemary before cooking. I tried it, it worked. It tasted just like the soup from Le Cellier!

:lol: I make mine from left over roasts and steak, hadn't thought of the rosemary though (I can't cook without garlic, so its already there).
I haven't been to Le Cellier and am trying to convince the family to try it, based on the favorite restaurant thread its a "must".

Its 3 degrees out, maybe I should cook up a pot of soup today. Thanks for the hint. :wave:

Thats right! Someone once told me "if you don't ask, the answer is no."
And the African Stew is soo very good. :slurp:
