I think the white stone work at the top just looks a bit too new.

Yep. Time and weathering will help with that. But right now it's just too "bright" next to the deep red brick.

The dome is also rather dull, with the sheeting and arches very gray. Whoever did the concept art seemed to recognize this and cheated a bit to emphasize the nighttime blue lighting, which hopefully will still be included.

its still too bad they didnt build it like the original concept art
with the viewing deck, and having actual doors on it where a telescope would come out

I don't think they carved it; they fabricated backing material with the shapes of the letters and then plastered over that. It may be that they didn't properly account for the thickness of the plaster when making the backing, and that why the letters are so shallow. Or perhaps they will eventually apply paint in a way that highlights the letters more.

Opening schedule update as of Monday, Nov. 28, 2016. From today's Orlando Sentinel newspaper (Section D1 and D3):

"Disney Springs' revamped Plant Hollywood Observatory is aiming to open in mid- to late December, but hasn't set an exact date. The 22-year-old themed restaurant is undergoing a major remodel to transform its exterior from a blue globe into a turn-of-the-20th-century observatory. Planet Hollywood Observatory management are aiming to have it ready for the holidays, said Amy Sadowsky, a representative for Planet Hollywood founder Robert Earl. It will be open for a few weeks before taking reservations, she said. Earl has estimated the renovations to cost about $25 million."

You can book online from Jan 3rd just now, direct not through Disney. DS wants to go on NYE so this sounds promising.

Which restaurant opens first: Planet Hollywood or the Paddlefish?? Place your bets... place your bets... (Bonus points if you can predict if Rivers of Light debuts before or after either of these!!)
Planet Hollywood is REALLY close.

PH probably beats Paddlefish by 2 months. To be honest, there's still a chance it opens this month in soft opening (at least from what my friends who work there say... they're eying being open by Christmas)
