My most impressive thing would be doing major highlights from all 4 parks in one day using the paper FP system and old hours. Did it a couple times with people who could only do one day in the parks.

For attractions, some of my favorites in loose order:
-I:ROE
-Horizons
-Original IMAG and ImageWorks
-Splash
-World of Motion
-All the original EPCOT Center songs in their rightful locations
-Alien Encounter
-Adventurer's Club
-Functioning Yeti
-If You Had Wings... Had Wings... Had Wings...
-Kitchen Kabaret
-Mr. Toad's Wild Ride
-Original CommuniCore interactive displays
-Cronkite and Irons' SSE narrations
-Dreamflight
-Wonders of Life (with all the attractions)
-El Rio del Tiempo
-Backlot Tour
-Snow White's Scary Adventure
-Original Ice Station Cool
-Universe of Energy
-Ellen's Energy Adventure
-Original Seas Entry with Sea Cabs
-Magic Journeys
-Symbiosis
-Mickey's Birthday Land
-Original Innoventions
-Timekeeper
-Streets of America with HISTK Playground

Most people have mentioned the big ones but here are a few I could think of

Staying at Dixie Landings resort and the Grosvenor Hotel in the hotel plaza (when they ran Disney buses to the hotels)

The original backlot tour at MGM when you went from the tram to the walking tour and you watched celebrities on TV screens like Warren Beaty, Goldie Hawn and Mel Gibson

The Disney village marketplace when it was much quieter and had shops like the gourmet pantry, Minnie Mia pizza and donalds dairy dip

The river boat ride at Animal Kingdom when they brought spiders and other animals round while you went round

Mickey’s Birthdayland with the show about baking Mickey Mouse a cake.

New Tomorrowland with Alien Encounter, Timekeeper and the Galaxy Search stage show (with giant Alien Elvis)

Eating at Adventureland veranda, odyssey and Tomorrowland terrace when you get free bags of chips

Going to the old Luau at the Polynesian resort - my dad got challenged by the Maori warrior

Oh I forgot about Timekeeper! That was a good one.
That was beyond good, it was great. It was Robin Williams at his best and whomever had to program the animatronic to find a way to imitate his gestures and body language was spot on. I truly hope they were recognized for their talent.

It might still be there if they just had put some seats in or at least swivel stools so the 360 degree was possible without having to stand for the whole show. After a day of walking around MK sore feet made for an uncomfortable experience. I'm sure it is what helped cause it's early demise.
