I kind of have to applaud Universal on this one, it's at least a better effort.
I think it’s new roofing. The old solar panels were installed on stands sitting on the roof, and those were removed last year
The mounting poles that are there now are new and have only been there for a couple months. For a while there was absolutely nothing on the roof. You can see what I’m talking about in this picture from a few months ago:Most of the mounting poles are still there. It will be interesting to see if they put new panels up.

A new structure is under construction between the two buildings.

It looks fairly similar in shape to Energy’s old maintenance bay. I’m starting to wonder if they only tore down the old one to allow easy access for construction vehicles and equipment, and now they’re just rebuilding it.I believe that is a maintenance bay.

Most of the maintenance area will be roughly where diorama two / theatre two used to be. I’d guess this was for RV egress.That and the maintenance bay would have had to have been majorly rebuilt anyways due to this being a completely different ride type and structure.
