For the first 2008 edition, we submitted about 100 pages of content changes for an 850 page book. That doesn't include price updates, which we don't count in those totals.
We also update each year's edition in February, which is about half-again as many updates. So roughly 15-18% of the book changes every year.
The touring plans get tested on an almost constant basis, and tweaked when necessary. Actually, this is an interesting point for the touring plans. We've tried mightily for the last two years to come up with better one-day touring plans for the Magic Kingdom, since the ones in the book have remained there unchanged for a number of years. We spent many hundreds of hours in the parks, testing numerous variations on the plans, and didn't come up with anything consistently better than what we already have. In that case, a lot of effort went into something that had zero impact to the book. So it looks like we haven't updated it, but it's because we haven't found anything better.
We rarely change attraction descriptions, unless Disney changes the ride. We have gone back to re-visit certain classic attractions, like Pirates of the Caribbean, to put into better context the importance of the ride in theme park history. I expect we'll do the same for Splash, Spaceship Earth and other attractions in upcoming editions.
While the format of the hotel and restaurant chapters has not changed much over the last few years, much of the content has. The Contemporary review, for example, is vastly different than, say, 2006. And as Disney refurbs its resorts, especially its deluxe resorts, you've seen those reviews change.
Hope this helps!
