Another thing I noticed today, nighttime movies are every other day. I am usually here in August, so maybe it's a seasonal thing. I am used to movies being shown every night.

Can you blame any cast member for doing something like that? They are not responsible for the budget cuts and should not have to put up with any guest dissatisfaction that comes accordingly. If someone is upset that their favorite food item is gone, I see nothing wrong with informing them that its because of budget cuts and letting them know they should take it to someone else instead of getting yelled at for something they were not a part of and can't rationalize.
I'm personally glad to know that portion sizes are being reduced, hubby and I often share a meal in summer, we don't eat as much, due to the heat. Now, we will have to rethink our strategy to keep down costs. Probably will bring our own snacks from home to share.

Was at Magic Kingdom yesterday, menu items are also being removed as part of these cuts. We were told at the Colombia Harbor House that the Lobster Mac and Cheese (one of our favorites) was removed from the menu to cut costs.

The correct answer is budget cuts. To my ears from a WDW Chef neighbor. You have not seen the end of the dining "adjustments".
wait a sec, so this means even more cuts in the future and less offers?
most restaurants have very limited offers already (aka the classic 1 meat, 1 fish, 1 chicken + the "allergen, fat free free" variant dishes that are repeated on every sit down restaurant).

They've been doing that in the winter months for the past couple years. I don't like it.

Well true, except that CHH is a QS restaurant, not a sit down, so like any fast food place that serves fresh seafood, it cannot take 20-30 minutes to prepare, so cannot be frozen. You can't boil frozen lobster and expect it to taste anything like fresh. If it doesn't sell, it's thrown away, and the place loses money on it. Oh, and they do still have a lobster roll on the menu, for those wanting lobster. TBH, I've never seen mac 'n cheese at CHH, except for the kids menu.
you CAN refrigerate already boiled lobster.

In November, after a couple years away and vacationing in other places, I booked 6 park days at WDW for March. If I knew all these cuts were coming, I would have either head back out to Disneyland instead, or focused on other things in Central Florida. I'm definitely anticipating a certain level of frustration.

Thankfully we're doing Discovery Cove for the first time this trip... Which comes with access to Sea World and Aquatica for 14 days. We're already planning a day at each... But if the frustration level gets high enough, that number may well be higher.

Although now that I think about it... This is the one case where Disneyland really isn't a great option either! With all the stuff they have closed this Spring, folks out there are getting less for their $$ as well.

You'll have a blast. We usually do that each year due to the not-expensive add ones. Aquatica gets our water slide quota in for the trip and Seaworld gets two days from us - all for relatively little extra (we do two Busch days too). DC is beautiful, just do any Dolphin or snorkelling plans as early as poss incase thorms curtail things. First dolphin swim is worth getting there before 8am for. Eat after the swim and breakfast lines should be less too. Plus you'll want a late lunch so again lines should be shorter.

It's refreshing to see how non Disney can still work so well.

and the biggest problem with Disneyland Paris for me is that for us coming from the UK I still don't feel like I want to visit. Florida feels better value and has better weather.

They just made too many mistakes with the planning of that resort.
I always wondered why I saw so many from the UK when I go to WDW... I kept thinking to myself, why would you fly all the way over here when you have a Disney that is just a train ride away... Is Disney Paris that bad? or is it really just horrible weather that causes people to avoid it.

Thanks for the advice. This actually directly answered a few things I was already wondering, like crowd levels (doesn't sound bad), lines for food (I've read both that they're no big deal and that they're crazy), and booking dolphins early.

We're very looking forward to Aquatica and Sea World. It'll be nice for a bit of a change.
