OK, I found the original paperwork for the installation of the tarps. In the paperwork, it's referred to the "Future World Millennium Celebration - Millennium Central and Icon".
There wasn't an address listed for the location, but rather a specific diagram of the area marked off. (And what's cool is that it uses the original diagrams of the plaza, complete with all the waterways, etc)
And the contractor was the Amiercan Bridge Company out of Orlando. Though it appears that company has since relocated to Tampa.
EDIT: OK, I posted too soon. Came across a second filing for "Design, Fabricate and Install A Cable Supported Fabric Structure". The contractor for that was Birdair, Inc, Amherst, NY... So my guess is that ABC was in charge of the support columns and structures, and Birdair was the actual tarps.
Of course, you don't have to be quite as careful in taking things down as you do putting them up...
Of course, you start poking through the filings a bit more, and you come across the one for the demolition of the entrance plaza for the Leave a Legacy stones... (sigh)
