Since my doctor keeps harping about how important breakfast is, and to watch the carbs, I keep experimenting with tasty alternatives to sausage and eggs.
I have made this before and gave it another try. This is a Spam hash made with diced Spam (hey, I like Spam), peppers, onions, sautéed in olive oil then I added some chunky salsa and reduced the liquid down until it was thick.
Served it with some eggs and cheese and topped the whole thing with more salsa and hot sauce.
No wonder I get heart burn, but at least the breakfast is not boring.

Wow. That looks tasty! (I know you like Spam -- you've mentioned it before. You're the only person I know that likes it, but I also think that since it's not a popular item these days, there still may be a pile of people who haven't even tried it. Who knows? They might like it if they try it.) I just don't care for it, and would prefer maybe some cut-up ham, for example.

Looks good. I like Spam too. I usually put it in mac and cheese or make spam burgers.

OK, I know y'all are probably tired of these, but here is one more incredibly tasty, extra spicy breakfast concoction. I took some of the leftover fajitas, added some diced spam and sauteed in some olive oil then did a salsa reduction again and served it with eggs and cheese. Yes, it looks like a big serving, but this was split between us so not as big a calorie bomb as it looks. It was a flavor adventure though.

Outside of the ostracism, the most painful thing for me has been knowing she's not reading what I have written at Facebook Messenger. It's like I no longer exist to her. I feel like a ghost. It's distressing and I would have liked acknowledgment if this friendship is over.
I'm so sorry...I know this was a while ago, so hopefully you got it worked out now. That's so painful. I guess my best advice is that if she is upset about you telling her your feelings, it has more to do with herself than with you. Some people have a really hard time admitting to making a mistake and if they acknowledge the hurt they caused, they have to feel the guilt...some people aren't mature enough to do that, and half to blame someone else for their faults. But it's not your fault. I'm so sorry this happened to you. I hope this "friend" will be able to face it and realize she made a huge mistake.

It's been a while since I've been in here. November/December are always ridiculously busy for me and it's taken me this long to catch up. But, I was diagnosed with diabetis shortly after the new year, so I've been more careful about my diet and I've lost something like 20 lbs in the last 6 months or so. We'll hope I can maintain that.

My job has also moved to a different town. The downside is that it's too far for me to bike. I'm working on getting a drivers license here, which requires me to drive a stick shift...I'm not enjoying the process. The upside is that everything is on one floor and I no longer have to do stairs, so it's a lot better for my hip. There are also no more carts, which seems to be helping as well...it's just plain walking. I get my steps in, but I don't have to push a cart so my body is in better alignment to walk normally.

And that's pretty much it.

Still trying to get back into some kind of fitness routine, but it's all feeling strange. I still have coughing and congestion from being sick. We're all on the mend, but definitely not 100%. I haven't even tried running since Sunday. I've thought about it, but just don't want to risk it. The funny thing...I don't miss it! I tried doing some yoga yesterday, but after 15 minutes in, I just wanted to do something else. So...I did. I hopped on the bike for 30 minutes and incorporated in a bunch of arm work. I did a different variation of this today. I guess at least the biking, weights, leg work and abs seems to not aggravate my respiratory system like running on Sunday did...and maybe I'll experiment with yoga again...although, my brain is saying barre. We shall see. I've done some variation of all of this every day this week...so at least I'm keeping active.

I decided to take another leap back into adding lactose-free/low-lactose dairy back into my life. I used a non-fat Greek yogurt to make a tzatziki dressing that I've been using for a number of things. So far so good with the tummy.
I hope your tummy is still doing well
