working out for Disney

Salmon croquettes with mango salsa and spicy roasted Brussel sprouts.
So why am I posting this here when it has nothing to do with working out? I don't know, maybe I just am craving some acknowledgement for my efforts or seeking attention for no reason.
Anyway, I prepare dinner on weeknights and enjoy doing so, but it has been raining all day and I had no intention of grilling, so this is what I came up with. Fairly easy and my wife enjoyed it, so that is about all that matters to me. I made up the salmon croquettes recipe as I went along, the mango salsa was just a mango chopped up and mixed with some jar salsa, and the Brussel sprouts were just tossed in oil, sprinkled with crushed red pepper flakes, garlic powder, onion salt, paprika and black pepper and roasted in the oven. Again, easy peasy and kinda tasty.

Hello--

Just checking in. I am still working out. I've been busy with family stuff and gardening. My grandmother fell in her apartment and hit the wall so hard, she dented the drywall. She was in the hospital and then rehab for three weeks. They changed her diagnosis from Parkinson's to Multiple System Atrophy. She is going to be 85 this year, so rationally I know some sort of illness is to be expected at her age. But she is still my gram. I am closer to her than to my mother. I have been wanting to visit her, but my mom is always there and we don't get along at all. Decades ago, my mom was diagnosed with a (cluster b) personality disorder, but she never really thought she needed help for it. So, she is very difficult to be around. When I was first engaged to my husband, I moved to England to live with him. She came to visit and amongst the chaos she created was going back and telling my family my husband was beating me. My grandmother called me crying, thinking I was being battered and was begging me to come home. My brother wanted me to come home and even his girlfriend called me. My husband has never laid a finger on me! When my son was a baby, she threatened to call DCFS on us for abuse. I called her bluff and told her to do it. I was willing to let any case worker into my house to prove there was no abuse, so she backed down. These are just a few incidents off the top of my head I experienced as an adult. She is very upset when she is not the center of attention and she uses all sorts of tactics to express her unhappiness of not being the center of attention. I have learned to be non-reactive around her, but that is tiring after a while.

Anyway, I have been wanting to visit my gram and just help her out. I could cook some healthy meals, portion them out and freeze them. So all she has to do is stick something in the microwave when she's hungry. But she wants to visit this summer, so we're trying to make that happen. Unfortunately, my mom comes with her. But my house is large enough that I can get away from her when I need it.

So, I have been busy with that sort of stuff. I am really pleased that the weather is warmer and I am able to get out for walks in the sun. I love seeing all of the flowers and trees come back to life. I bought some plants and bushes and have been putting them in the yard. I'm just really looking forward to the warmer weather for grilling, sitting outside on weekend mornings with coffee and a book--that sort of thing. :)

Yikes. Sorry you're dealing with all that.

If anyone has any interest, here is the salmon recipe I made up:
Fresh salmon piece lightly poached then cooled and flaked, mixed in a bowl with an egg and some mayo for moisture, fresh lemon juice, cilantro, finely diced onion, black pepper, some finely ground bread crumbs for binder, then all mixed together then formed into the patties, then dredged in an egg wash and coated with panko bread crumbs.
Sauteed in a cast iron pan with a thin layer of oil until nicely browned on both sides. The mango salsa added a nice touch even if I mostly faked it and fresh made salsa would have been much better. Still, chopping fresh mango in jarred salsa kicks it up a bit in the flavor and freshness department without a lot of effort.

So glad you came to check in!! Wasn't it you who said your mother thought you weren't doing enough for your gram when you lived far away and couldn't? I've known some moms like that and it never goes well when the children become adults. I'm sorry you are in that situation. I hope your gram gets to come visit you!! Is there no one else who could come with her besides your mom?

Well, I don't like fish, nor mango, but those brussels sprouts look amazing! YUM!

My boys like pineapple salsa with theirs. Cilantro sounds good but my dh and one of my boys doesn't like it.

Today was spring cleaning the kitchen and dining room. Top to bottom including windows, behind and under all appliances. Moving them by myself was fun NOT! I also did a nice shortish practice when I was done. Miso soup and veggie sushi for me tonight:hungry:

@epcotisbest now you have me missing El Pollo Campero sp?. They had the best salad with cilantro dressing. It was one of our favorite qs places.

There was a place we liked called Pollo Campero at Downtown Disney kinda between the Lego Store and T-Rex that we used to like. Later they added something called Bodie's All American in the same building as Pollo Campero. They did not last long.
There is another chain called El Pollo Loco, but I don't think they had a Disney location. I like your thinking though, El Polo Campero Loco would have covered all the possibilities! :)

We too have been doing some spring cleaning, but so far mostly outdoor stuff. Inside clean up time will be soon enough. Can't say I look forward to it, but it has to be done. Not sure how we manage, but we seem to grow some industrial strength dust bunnies around here. I think the dogs have something to do with it...I'm gonna blame them anyway.

I already finished with the indoor cleaning last month.😁If the rain ever lets up this week, I can do some outdoors. I did get in my walk between showers. Poor DH is on his own tonight doing the treadmill however. :joyfull:

Thank you for jogging my memory. The dust must have gotten to it:banghead: Pollo Campero:hungry::hungry::hungry::hungry: every trip we stopped there on our way in. We also stopped at least once on the way out. Good food, something for everybody and not hard on the wallet. That and losing the little Disney store where everything was $10 or under was something my family was rather sad about when DTD went to DS.

Most of the bunnies I found were on the ceiling fans. There were some very busy bunnies up there:eek:
