I made a weird concoction this evening that turned out very tasty. Does not look very appetizing, but wow what a flavor explosion. Got some ground chicken that I made burgers with not long ago and they were kinda bland, so wanted to step it up with the rest of the ground chicken.
I sauteed some onions and bell peppers, then some ground chicken. Mixed them together and added some Kings Hawaiian Big Island Lava sauce and let it simmer for about 20 minutes. Topped it with a pineapple slice (yeah, from a can because I did not have fresh pineapple) and drizzled it all with some less sodium soy sauce.
Again, not much to look at, but very tasty...maybe a little too spicy with the King's Hawaiian sauce, but that did not stop me from enjoying it.
I like tossing stuff together and seeing what the results are. This would have been better served with some sticky rice, but I certainly had enough carbs already with the sauce and pineapple.

We just bought 3 new laptops (one for myself and each of the kids) and then both of them outgrew their bikes in the last month, so we just spent about $1500 on bikes. That has to rank up there as total and complete dedication to deceit. I'm in awe!Yeah, those library folks did not like it a bit when I rearranged those books so they were in no particular order. The hardest part though was pulling all the Dewey decimal labels off them before I took the pics.
Yes! I think you need to move around and not sit all day but not so that you are exhausted every evening. Maybe up your protein to give you energy. Take breaks when you can. Good luck. They've changed the schedule again, and I'm scheduled every day this week, and every day next week except Friday because it's a holiday. I've unfortunately always struggled a bit with my weight and have recently been getting back into it. Happy to report I'm down 11 pounds in a little over a month! I probably still need to lose another 35 or so to get back to my goal weight, but I am happy with the good start.
I've been really cutting back on carbs and that seems to help a lot. In the past I used to run a lot, but I'm even finding success just going for a 45 min walk every evening when I get home for when I don't feel like doing something so "strenuous".
I'm only 27, but due to sports (specifically softball catching) through high school, my knees are also less than perfect. I've ran a bunch in the past, including maybe 10 half marathons and 2 full marathons... but I probably want to stick to the 10k races these days lol.
