So sometimes when my wife is away I congratulate myself for not eating junk food, and tonight is no exception. I resisted the urge to grab some fast food or pizza and instead diced up a small sweet potato, topped the pieces with some garlic salt and crushed red peppers and roasted them with a little olive oil. Also had half an avocado drizzled with lemon juice and topped with a dollop of salsa and had a piece of Sam's Club rotisserie chicken to go with it. This made for a tasty and colorful meal that was lower in calories and carbs than pizza or BK.
Since I had to go to the airport and back, I could have stopped at any number of places and consumed mass quantities of calories and carbs, but no, I came home and had this, and liked it.

I admire your willpower -- it's really hard to turn down easy, read-to-eat food along the way. Although, what you made above it better than anything you could have bought along your travels.

OMG, you guys, I'm exhausted!! I worked today and it was so busy that I worked an extra 45 minutes and I worked REALLY hard. So between that and all the stuff at home, I've spent 9 out of the 10 hours on my feet/exercising. My cracker, of course, only registered 3 hours of movement, and while it says I've done almost 30,000 steps, it says I've only burned 1070 calories....it says I walked 22km, and it only registered a 3rd of the time I was moving, so does that mean it's only registering 1/3 of the other things? I can't imagine that 9 hours o!!f movement translates to only 1070 calories burned!

@epcotisbest , you've inspired me to get some rotisserie chicken at some point this week....it looks SO good.

@epcotisbest , you've inspired me to get some rotisserie chicken at some point this week....it looks SO good.

It is very versatile and you can make lots of things with it. I have used shredded rotisserie chicken as a base for soups and Brunswick stew, and when the fresh tomatoes come in in a few months, I like cold rotisserie chicken with sliced tomatoes and mayo on a sandwich. It is good as a quick lunch too. Lots of uses.
