Good afternoon! We had rain this morning and now the sun is out! yay but the winds are picking up. Talked to DH this morning. Rain is sporadic in Wilmington and some flooding happening. After seeing damage in SC, I really hope it goes by them. Keeping busy doing more bills, rubbing a meowy kitty (think she misses Daddy), and general cleaning. You know it is really hard making meals for just one. I don't see how I did it when I was in college. You make these meals but have to eat the same thing 4 times. Ugh! I don't like leftovers a lot. I want a different meal each day. Oh well...maybe I can freeze some of this stuff. Lol Have a great weekend everyone!

My husband travels a couple of weeks a month for work, so it's just my son and me a lot. My son likes to make his own dinners, so I end up cooking for myself. If I am not feeling lazy, I will cook 2-3 meals and rotate through them. Otherwise, if I am super lazy, I will make a casserole or soup/chili and eat that every night. LOL

But it is a pain in the butt to cook for one. I need to half the recipes like MinnieM123 says. :)

Hello-

Yesterday, I did a full body circuit. I was supposed to follow it up with some cardio, but I didn't. Don't judge, but I am still unpacking/moving things around my house and I got caught up in that. I really should have thrown out more stuff before we moved!

I am going to do my BodyCombat workout later on. I went to Greek restaurant last night and it was a bit on the salty side--I'm feeling a bit puffy today. LOL Lots of water with lemon and a sweaty workout is the order of the day.

We're supposed to go to Longwood Gardens tonight. I love the night time show they are doing. It's so creative and beautiful. I hope the rain clears up for it.

Local place had turkey breast on sale for .99 cents. Cooked it on the grill indirect at 240 degrees to an internal temp of 160. It took a little less than four hours. Very moist and juicy. Practice for Thanksgiving? Maybe. Problem is when others taste how wonderful this is, I'll have to prepare turkey for multiple gatherings as no one will want turkey in the oven, or fried turkey ever again. What to do? What to do?

I don't know what part of NC you live in, but, here in Raleigh, it started raining during the night and it has been raining hard all day long. Many areas are flooded over and even though it is supposed to be letting up soon, it hasn't yet.

That is a great deal for turkey breast. What did you baste it with? It looks so nice and brown.

Yes, today was a very nice day, sunshine etc., I drove around locally and saw that there was a lot of tree damage but most if not all the water has receded now. What floods around here are brooks and ditches near roads. All is good again. Still some isolated areas without power and according to Duke Energy some may take days to recover.

Thank you. Yeah, every now and then they will have something on sale for a special price. Last time it was Boston butt for the same .99 cents per pound.
As for the color, I just rubbed the skin with olive oil. No basting. Once I close the lid on the grill, I don't open it again until time to take it out. A saying in kamado grill cooking is, "If you're looking, you're not cooking." The grill holds in moisture so no basting is necessary. Most of the coloration comes from smoke. I used Apple wood chips for added smoke flavor. I like to use either Apple, cherry or pecan wood for a nice flavor and color.

Glad it was not worse and that you are safe. Some of the flooding they have been showing on the news is scary.

I'm so happy it's drying out. I hope life goes back to normal for all those who got the brunt of the storm.

Sometimes I think you and my dh are long lost BBQ brothers. he uses apple and cherry on hams.

Good morning day 12 of yoga and I'm going to do lots of running around today, farm market(yea for holiday opening), apple picking and a few other errands. I hope to be home in time for a nice short practice before having to start cooking. I hope all of you are enjoying the holiday

Yes, and where it is certainly is tragic, however, if I have learned nothing else in my life it is that the media loves to sensationalize. Something they have been doing for years. In the 90's it was the Weather Channel. They would make it sound like everyone in the state would be treading water. The flooding was in the usual suspected low areas, mostly due to really good engineering when the roads were built. (yes, that was sarcasm) So for the most part except for blackouts and isolated spots we fared pretty well. Mostly just a day of heavy rain and wind. That happens around here even when they don't have a named hurricane attached to them.

Yeah I decided to just fix salads, soup, and sandwiches. It's just too much trouble to fix huge meals. Thanks!:)

Good afternoon everyone! Sorry I haven't been on much this weekend. I didn't even realize it was a holiday until I read someone's post about no school. Our schools don't get out so it is just the federal offices, banks, and mail delivery closed.
Update on my DH. He is still in Wilmington with power restoration. They are all ok. They rode out the hurricane with no flooding around their hotel or trucks. They started working on Sunday. Saturday was just not safe for them to get out. It is going to take a long time to get all the power back on so I am not expecting him back home for awhile.
I think the kitty is wondering where "Daddy" is and why he isn't home to play. She keeps standing at the front door looking out and watching all the cars go by. :)
I have been busy cleaning the house and today I mowed up the leaves in the yard. Tomorrow I may start on my back deck painting. Thanks for the thoughts and prayers for my DH while he and his fellow workers are down there. I really appreciate it!!:)

Hello-

I am in with a Legs Circuit. I am hope I am not too sore tomorrow, because this one was grueling. LOL

My son's school district had school today. I think because they had two days off last week for Rosh Hashanah and this Wed. for Yom Kippur, they opt out of Columbus Day. My husband had the day off though.

I have been getting my house ready because Tiggerish and AlissaFalco are coming down to spend the day with me in Philly. I am excited about that and I have been looking forward to it. It'll be like a Mini-Magic Meet Up. :)
