Good morning, it's my favorite day of the week Zen day. LOL nothing like a day of yoga and a nice warm bath or 2 I just wish I didn't have to go out and grab some groceries but I spent yesterday mostly outside enjoying the warm once the wind died down a bit.

Back in Sept. me and FIL went to Charlotte and visited five different race team shops and then went to the NASCAR Hall of Fame. Fun day. I have pics if anyone is interested.

Back in Sept. me and FIL went to Charlotte and visited five different race team shops and then went to the NASCAR Hall of Fame. Fun day. I have pics if anyone is interested.

My dh has a low carb coffee favorite 1 cup of coffee, 2 tbsp cream, 2 pkts stevia, a dash of almond extract and a dash of vanilla extract whipped together in a high speed blender

Another of dh's low carb favorites in a nonstick pan water saute 1/2 cup onion, 1/2 cup diced peppers until done add 1 tsp olive oil and 1 egg whipped with 1/2 cup egg whites and scramble together with 1/2 cup frozen broccoli that was heated in the microwave. Top with a bit of salsa.

Interested. I have a brother who lives in N.C. and I've seen the Petty Museum, and also Richard Childress Racing (and Vineyards) The Childress race cars on display and the property were very impressive. (This was about 5-6 years ago that I visited N.C.)

I think the Daytona 500 is wide open and it will be a toss up who will win. (Don't get nervous if your favorite driver is close to leading the pack, and start pulling out bags of potato chips and dip, etc., though!)

That sounds good. Will try to find some of those extracts you mentioned. Vanilla is easy. Not sure I have ever seen almond extract.
