First of all, that looks DELICIOUS!! :hungry: :hungry: Second of all, I just read Figgy's comment, and I agree that your portion size looks appropriate for you. I could understand if you went back for seconds or third helpings, but the plate you showed us, certainly looks reasonable for a dinner serving.

Thanks. Yeah, no seconds or thirds. Did cheat a little this past weekend with some shrimp and grits, but was disciplined enough to not eat all of the grits. Actually I only ate a little bit of the grits, but I finished off the shrimp without hesitation. This is an older pic as I did not take any pics of the weekend cook.

Got in a good, fast-paced walk at lunchtime today. Temps in the middle 50s and not a cloud in the sky. Supposed to only get better by the weekend. I will be home alone from Friday until Wednesday and it will be tempting to go get take out but I'm gonna try to eat right and walk some while she is gone.

Maybe you could get yourself a substitute treat (instead of higher calorie take-out), since you're also cooking for yourself, and all by yourself at home. For example, perhaps you could go to a store and buy a movie that you've been wanting to see. That way, you won't feel deprived, and watching a movie would also take up some of your time while you're waiting for your wife to return in a few days. Before you know it, your sweetie will be back home, and you will also have stayed on your healthy diet, while she was gone. Sounds like a win-win to me!

Great for you, you're doing great. While your dw is away how about some of your favorite grilled veggies while watching your new movie. After your walk seeing it's going to be nice out.

Good morning I got up and did a bit of Zumba just me and my 6 left feet. Some things are just not pretty, fun and calorie burning but not pretty at all. LOL In a bit I'm going to bundle up and head out as one of my friends wants to go walking:cold::cold::cold::cold: I'm really hoping the extra shivering while out will burn a few extra calories:confused::cold::cold::cold::cold: She hates the cold more than even I do but she's determined to be able to do the whole 2 1/2 mile walk at a quick pace once the weather breaks. I've go to admire her spirit and determination.:inlove: She's doing really good with :joyfull:1 1/2 miles so far. today is left over day!!!!! Yea no cooking:inlove::inlove::inlove::inlove::inlove: just salad prep:facepalm:

Yeah, I checked and just can't find any vegan pork rinds. Guess they just don't stock them down here.
I think you will be searching a long time to find vegan pork rinds. I wonder what they would have to be called? I know seriously tasteless, we're just kidding with you, you might as well eat your money, rinds! They'll need a big bag just to put the name on them.

OK my mind (what little there is left of it) has officially been blown:

OK, the runners are on their way. They left about an hour ago. I could not go back to sleep so got on up. They should be there in time for lunch at Earl of Sandwich before going over to the expo to pick up runner's packets and race numbers. 13.1 miles early Sunday morning while I am still asleep.
