The people I sit next to at church had me over to their house today for a get together in my honor. They cooked me a big meal, baked me a cake and had gifts for me. They are such sweet people. I’m feeling a bit sad right now. I’m going to miss them so much. I’ll get to see them again though. They showed me the bedroom I’ll be staying in when I come back to visit.

That is so awesome. New adventures await though.
I mean, we are almost 7 days into the new year, and the Christmas holidays are officially over now. So why not?

They were hot. They were garlicky. They were just the right amount of salty. They were marvellous. I might have eaten 3 1/2 of them! (No worries, Robin brought 8 in total.)

Mike’s seafood pasta was absolutely steaming!
My portobello ravioli ... not so much. Not cold enough to send back. 7/10 instead of 10/10 if it had been hotter. Actually 8/10, because Robin remembered “no diced tomato garnish”.

I know a lot of people think Olive Garden is very pedestrian, but we like it - plus, we don’t have any of them at home, so we only eat there every 18 months or so. It’s always good.
I miss Olive Garden. I've never had one in any place I've lived, and I love "Italian" food, so when we are in the States, we usually try to find one. BUT, in Fort Collins Colorado, which is only an hour and 15 minute drive from Laramie, Wyoming, there's a little Italian place, family run, and the owners are Italian immigrants. THAT is fantastic food and given the choice, I'll take that over Olive Garden. But I still love OG!

It's the official fight song for the University Of Tennessee Volunteers. It's played any time the team scores a touchdown, which probably explains why you can't place it, especially over the past couple seasons.

Some nice state parks too that are worth exploring.

-Cumberland Falls ("The Niagara of the South")
-Natural Bridge (Not to be confused with the more-well-known Natural Bridge in VA)
-Abraham Lincoln Birthplace and childhood home.
-Fort Boonesborough (I can't remember if this is considered a "state park", but still a nice historic site)
-Daniel Boone (and his wife's) resting place. (Bring a camera. Beautiful view of a river and downtown Frankfort from up on that hill).
-Mammoth Cave National Park (The caves and caverns were nice, but I prefer kayaking the Green River out there. Yes, it is green.)
We did Mammoth Cave National Park and Abraham Lincoln's birthplace on our way through on one of our trips to Illinois to visit mom's family.

Every year we get together with a few retired friends after the craziness of Christmas for our own little post-Christmas party. We exchange small homemade goodies, and basically just talk about the grandkids :joyfull:. Anyway, this year we're having it Wednesday night (mind you, we're leaving Thursday morning....) so I've been getting stuff ready for it today. I made another batch of spiced pecans, which came out fine, but the second batch burned a bit... No problem - I made plenty.

I made a batch of fudge, only to realize that I hadn't put any nuts in it, but that should be OK I guess. Makes it easier to cut up anyway.

Then I planned to make cherry breads, which are kind of a tradition in our little family. They're not hard to do, just a little time-consuming, but heck, I had all afternoon to do them. So I did all my chopping and prepping, put most of the ingredients in the mixer bowl, fired up the mixer and within a few seconds, it screamed and succumbed to a painful and rather noisy death. I do have a little hand mixer that I use more often than the big one, but this batter, dough, whatever is way too thick for that to work. So I hand-mixed and mixed and mixed again with a wooden spoon til it looked close to what it should be. I baked them and they do smell good - hope they taste OK.

So now I have to think about replacing my mixer. I've had that one for 30+ years or so, so it owes me nothing, but a warning would have been nice. Probably not going to do anything about it til we get back home in the spring, but by then maybe I'll know what to look for.
Sympathy like....it sounds well loved. May it rest in peace after long and dedicated service.

I miss Olive Garden. I've never had one in any place I've lived, and I love "Italian" food, so when we are in the States, we usually try to find one. People must love OG. Because we’d not eaten a single bite all day, we stopped for “blupper” at just a few minutes past 4:00, and the restaurant was 3/4 full. When we left an hour later, every table was occupied, the waiting area was 40+ people deep, and another dozen mingled outside.

Yeah, most family run Italian joints are better than OG, but it doesn’t mean we don’t enjoy it. As someone, I forget who, used to say ... slurp. :hungry:

That's so nice of them! At least you'll get to visit. When do you leave?

Please don’t think I’m complaining ....

I have spent 14 of the past 21 nights sleeping in 6 different hotel beds. While every one of them was comfortable, and a few were VERY comfortable, there’s nothing like your own bed.

I am enjoying my second cup of tea, the electric blanket is set to 7, and the essential oil diffuser is diffusing my favourite blend. Life is good.

I have to be out by the 14th but we’re going to try to leave on the 13th after I get out of church. It still hasn’t fully sunk in that I’m leaving in just a week. I think this is going to be more difficult than I was anticipating.

You've determined that this is the best path for you to take, but that's not to say that you won't miss people or certain situations where you are now. Still, your move is a positive step, and you can always keep in touch with your friends in that area. I'm sure they support your decision, and best of luck to you.

For obvious reasons, no one has ever bought me a mixer. Most especially not my mother, who knew me best. 😂

I don't have a big mixer set, and never wanted one. What I do have is an 18-year-old, hand-held mixer from Farberware, that's great for cake batter, etc. I don't bake often, so this little portable one is fine, and it takes up just a small bit of space in the cabinet. Win-win! :happy: (P.S.: It also came with some stronger blades for bread dough, etc., but I don't use those.)

We never go to OG because of my garlic issues, but they are popular here too. It always amazes me since we have arguably the best Italian food in the country right here, Red Lobster didn't survive here for long for the same reason.

I love my hand held mixer too, but it can't handle bread dough or heavy batters.
