Yep, fried on top of fried with extra fried sauce…not exactly the healthiest…!!!!!
We used to go to Catfish Parlour at least once a month when our 3 kiddos were younger, and almost every Friday during Lent (sometimes we’d go to the fish fry at our church).
The one near us closed not too long before we moved out of Austin, as the owner wanted to retire. Fortunately, his son owns the location closer to us now, so hopefully they’ll be open for many years to come.
My folks used to take us there when we moved back to Texas in ‘76, and the food has always been just so ridiculously good over all these years…!!!!!

And yes, although tempura isn’t exactly super healthy, the Beluga meal was probably healthier, overall…!!!

A little bit of a different post for this thread…

There’s a place about an hour west of us called Sweet Berry Farm. When they’re not growing berries, they’re growing flowers, like tulips and others, but are closed for a little while during the winter. You can pick your own berries and flowers, and the pics below are from a visit to pick strawberries in April of 2019…!!!



Megan found a heart shaped strawberry…!!!!!



Then, we weighed and paid for our haul, before checkin’ out some merch and headin’ home…!!!

My father used to love blue mold cheese, and none of the rest of us in the family could stand it!

I have yet to meet a (purposefully ) moldy cheese I didn’t like…!!!!!
The first time I ever had anything moldy cheese related was Roquefort salad dressing. We were out to eat somewhere, when I was a kid, in No Cal. My Mom encouraged me to have a salad with that dressing on it, and I’ve loved the moldy cheese ever since…!!!!!

We made a big ol’ pot of pretty-darn spicy chili last night, with cornbread…Carolyn added a little more spice, and we were both sweating (let me correct that - I was sweating, she was “glowing”…!!!!! ), but it was sooo darn delicious and definitely hit the spot…!!!!!

And, not to leave out the 3 Shiner beers I had that afternoon in celebration…!!!!!

Note that the salad portion of the recipe isn’t exactly like the one my Mom makes, but the dressing portion of the recipe seems pretty spot-on. It’s kinda’ sweet, sour and tangy, and pretty light. Very tasty…Mom has sent it home in good-sized containers before, and I’ve eaten the whole container for lunch…!!!!!
Mom uses cut green beans, garbanzo beans and kidney beans, with chopped red onions and green bell pepper.

The recipe, with a pic of Moms version below that…!!!

I'm pretty fond of Shiner Bock, too, but have never seen the other two Shiners. Maybe I gotta get back down to Texas...

I've never seen a three bean salad without green beans (and TBH I normally skip it), but would definitely try a cannellini-kidney-chickpea version...thanks for the recipe!
