A little off-topic but...yesterday, on the way home from church during that freak blizzard...I started to crave Country Fried Steak, Mashed Taters, and Country Gravy...so I made a quick stop at the market to get the ingredients, and made it. And it was good, too!

Hubby got the Roast Beef Sandwich w/the pretzel, which seems to be missing a tiny piece. Not sure what happened there.

I hate spinach too. I can only eat it if it's mixed in with something like fish or pasta. Which is odd because I don't like my food touching each other most of the time.

This morning, my online class registration was at 8:45. I jolted myself awake when I saw how bright it was outside, thinking it was 9 and that I had missed registration. It turned out it was really 8. Time changes.

Two classes that I wanted filled over the weekend, so I had to figure out classes to replace them. Which is why I'm now stuck with an 8 am I didn't want.

Next semester, I'll have junior standing, so I'll get to register pretty early and should get into more classes that I'd want. Including the two that I did not get into this semester.

I make a puff pastry filled with sauteed spinach, lemon, parmesan cheese. Its delicious. The other ingredients hide the flavor of the spinach.
