In other news, remember the storm of yesterday? turns out it had hit the big city of Guadalajara.. big time.. leaving some areas buried by almost 2 meters of ICE . It was an all time hail record leaving cars sunk below tons of ice that could remind you of Canadian Towns that had usual snows of more than 1 meter. Problem? There has never been this much ice nor snow in this area.. ever..

This is Lime Sponge Jello. It has 75% less sugar and calories per serving yet it is standard jello.

4 cups water-boil. Add 2 large boxes of Jello and dissolve. Pour in large mixing bowl and take out just before it is jelled. Do not add more water. Using an electric mixer beat until it goes from Kelly Green to a light mint green and is is filled with mini bubbles and light weight similar to whipped cream. Chill again till it jells again.

Got back at about 9:30p from the annual “Splash Bash” for the pediatric cancer foundation nonprofit that both DDs are on the BOD of.
It was, again, a great success and a great time was had by all...!!! :)
Many of these kiddos and their families show up, but, for obvious reasons (in the hospital, currently undergoing treatments, etc.) many, unfortunately, cannot.
Of course, the vast majority that come are either in remission, or have been cancer free for a while.
There was one little girl there that was diagnosed with brain cancer when she was 3.
She is now almost 9 and has been cancer free for over 2 years. She very much loves babies, and wants to be a NICU nurse. She spent a good deal of time hangin’ out with our dear lil’ Emy...!!!!! :happy::)
It’s just so reassuring, and hopeful, to see how so many of these kiddos have survived and are now in their late childhood, early teens, and even late teens now, when they were diagnosed so young.
Our DDs just feel very fortunate that they didn’t have to go through what these kiddos have during their childhood, and just want to do what they can to contribute, and to try and ease what these kiddos and their families are going through.
The hardest part, of course, for everyone on the foundation is when a child does not make it. It is heartbreaking, but, they continue because they know they are helping to make a difference, as they have been told so by the many families and kiddos that they help, that they are, indeed, making a difference.

Holy cow! That is more than 6 feet of ice! :eek: If I wouldn’t have seen the pictures, I wouldn’t have believed it.

How did it taste?
I don't like normal jello and this doesn't look much better.

Yum. That looks awesome. What is in there and what dressing, spices?

It's actually an italian style dressing that my friend from Buffalo brought me when we were in Minnesota getting our knitting on. It's called Chiavetta's. They also make a marinade which is to die for.... but you can't buy it in the stores anywhere but NY. You can have it shipped, but it's a pretty penny. I have a work friend who is also from Buffalo, and she brings me a gallon of the marinade when she comes back. (driving) So I am lucky to have suppliers!

ETA: I wonder if @Doc Disney knows about it?

It's from the official app. Just off to get our $$ to pay for the trip excursions. We have the money for the tips saved already. Less of a shock when you get the bill on departure day.
I pay the tips when I pay for the cruise, that way it hurts less. I almost never book excursions and if I do I use an official local tour guide and pre pay that as well. I enjoy my holiday a lot more this way.
