you should try some mexican "enchiladas suizas"

yum! I had to google it. We have reservations at a Mexican restaurant for tomorrow night, where we always order the enchiladas, but I'm told by my Mexican friends that they are not enchiladas...but it looks a lot like these, except it's more of a orange/red sauce. SO good, though.

Sympathy like. Well, I'm very sorry. Maybe there's another way you could kind of say goodbye in your own special way. I will keep the family in my prayers.

Well it is possible to drive to Europe from the States. You just need a lot of time and a specially prepared landrover.It was last done in 2008.

There are different sauces.. infact, the enchiladas suizas I know, usually has red tomato salsa.
The ones in google appears as green.
The most delicious used to be from the SANBORNS chain in Mexico city.
Note that you can also try the green spicy and Mole enchiladas.
they are all delicious!

Almost 80 degrees here today and through the weekend. Supposed to cool down by Thanksgiving, though. And at least it doesn't stay hot all night - that drives me nuts!

I have never had the chance to try mole sauce. We are a long way from Mexico so our selection is pretty small. But I would love to try mole.

I hope everyone's weekend is off to a good start. The kids and I see about to make homemade chicken nuggets for dinner and we have a platter of shortbread cookies/mocha cakes ready for dessert.

Tonight I am going to a concert on my own to hear my friend play. She is a professional pianist. I am actually excited to get out by myself, as odd as that might sound. Kids are looking forward to a movie night with dad.

Thank you. I sent each daughter a personal letter, with card, and donated to the hospice fund in their mother's memorial. I would love to be there to hug them, maybe in the future....
